THE manufacture of dried whey as a by-product of the dairy industry assumed industrial importance about ten years ago. Two factors were responsible for the development of the dried whey industry: (a) the discovery that the yellowish-green pigment of whey was vitamin G, and that whey was a good commercial source of this vitamin; and
