RESUMOO objetivo deste estudo foi avaliar a composição de compostos fenólicos, flavonoides e a capacidade antioxidante de extratos etanólico obtido por maceração de folhas e caules e ramos folhas Stevia rebaudiana. Os compostos fenólicos foram avaliados pelo método de FolinCiocalteu utilizando ácido gálico como padrão. Flavonoides totais foram quantificados em equivalentes de quercetina e rutina e a atividade antioxidante foi avaliada por meio da redução dos radicais livres DPPH (2,2-diphenyl-1-picrylhydrazyl). Compostos fenólicos em mg equivalentes de ácido gálico/g do extrato etanólico obtido por maceração das folhas e caules apresentaram-se no valor de 358,8 e 690, respectivamente. A capacidade antioxidante expressa em porcentagem dos respectivos extratos foi de 75% e 96,92%. O conteúdo de flavonoides totais não foi expressivo, sendo maior nas folhas. Este estudo mostrou que os extratos etanólicos das folhas e principalmente dos caules e ramos de Stevia rebaudiana podem ser usados como importantes aditivos em alimentos.Palavras-chave: Stevia rebaudiana, Compostos fenólicos, flavonoides e atividade antioxidante.
INTRODUÇÃOStevia rebaudiana (Bert.) Bertoni, planta da família Asteraceae, é nativa do Paraguai e é cultivada em muitos países (Dacome et al., 2005). Tem importância na indústria de alimentos por apresentar, principalmente em suas folhas, glicosídeos diterpênicos com alto poder edulcorante, dentre os quais se destacam o esteveosídeo e o rebaudiosídeo A (rebA). As plantas de estévia apresentam ainda mais de 100 compostos, (Wölwer-Rieck, 2012) e extratos das suas folhas têm sido tradicionalmente utilizados no tratamento de doenças como o diabetes (Tadhani et al., 2007;Shukla et al., 2009), possuem efeitos benéficos na saúde humana, incluindo antihipertenção (Chan et al., 2000), anti-hiperglicemica (Abudula et al., 2008), não é cariogênico e na função renal (Shukla et al., 2009). Esses extratos contêm compostos fenólicos, flavonóides, alcalóides, clorofilas hidrossolúveis e xantofilas, entre outros que têm sido estudados como fonte desses efeitos benéficos na saúde humana. Importantes concentrações foram encontradas nos extratos etanólicos, metanólicos e usando acetato de etila como solventes (Wölwer-Rieck, 2012;Shukla et al, 2009). Porém mais estudos devem ser realizados devido ao fato dessas plantas apresentarem variações. Os caules e ramos de Stevia rebaudiana apresentam menores concentrações de glicosídeos de esteviol, e, portanto são geralmente descartados da produção de adoçantes, alimentos e bebidas para seres humanos. Porém esses constituintes representam uma biomassa significativa (35%) da planta (Brandle et al., 1998) e podem apresentar
