To define the food resources of Red Deer (Cervus elaphus L.) in Europe and to detect the principal sources of variations in their diet, we reviewed field studies based on stomach content analysis. The study areas were classified into three main habitat groups (mixedconiferous forest, mixed-deciduous forest, moorland), the food items into 13 plant categories, and we used five seasonal classes (winter, spring, summer, autumn, hunting season) for analysing the data set. For statistical analyses we used correspondence analysis and analysis of variance.Red Deer eat a varied diet comprising at least 145 plant species. The main sources of diet variation were due to habitat, leading us to identify three habitat types characterized by the consumption of a few key species. Clear seasonal variation was observed only for the seed and fruit items which were used mainly during the hunting season.Our results confirm that Red Deer can be classified among the intermediate feeders, with a mixed diet of grass & sedges (29%) and concentrate food items (63%). However, they also show Red Deer to be primarily a concentrate feeder (max. 75%) with no significant seasonal variation between the quantities of grass or sedges and concentrate food in the diet.In the light of these results, we discuss potential competition with other sympatric ungulates (wild and domestic). We suggest that it may be useful to take into account key food resources in modelling population dynamics and in taking management decisions.

BackgroundDental microwear analyses are commonly used to deduce the diet of extinct mammals. Conventional methods rely on the user identifying features within a 2D image. However, recent interdisciplinary research has lead to the development of an advanced methodology that is free of observer error, based on the automated quantification of 3D surfaces by combining confocal microscopy with scale-sensitive fractal analysis. This method has already proved to be very efficient in detecting dietary differences between species. Focusing on a finer, intra-specific scale of analysis, the aim of this study is to test this method's ability to track such differences between individuals from a single population.Methodology/Principal FindingsFor the purposes of this study, the 3D molar microwear of 78 individuals from a well-known population of extant roe deer (Capreolus caprelous) is quantified. Multivariate statistical analyses indicate significant seasonal and sexual differences in individual dental microwear design. These are probably the consequence of seasonal variations in fruit, seed and leaf availability, as well as differences in feeding preference between males and females due to distinct energy requirements during periods of rutting, gestation or giving birth. Nevertheless, further investigations using two-block Partial Least-Squares analysis show no strong relationship between individual stomach contents and microwear texture. This is an expected result, assuming that stomach contents are composed of food items ingested during the last few hours whereas dental microwear texture records the physical properties of items eaten over periods of days or weeks.Conclusions/SignificanceMicrowear 3D scale-sensitive fractal analysis does detect differences in diet ranging from the inter-feeding styles scale to the intra-population between-season and between-sex scales. It is therefore a possible tool, to be used with caution, in the further exploration of the feeding biology and ecology of extinct mammals.

We studied the nutritional behaviour of hinds foraging on a mixed-forest edge by direct observation of their choices at each season and by measuring nutrient concentration in the plants. We compared nutrient concentrations in the observed diets with those in the total available vegetation, and with those of 1,000 randomly simulated diets in which we included only those plants that were actually eaten by the animal. Whether the available or the consumed feeds were used as the basis for comparisons had important consequences due to the presence of conifers and ferns, which were high in soluble sugars but were never eaten by the animals (potentially due to their toxicity). The selected diets were lower in sugars than the total available vegetation in summer, but were actually higher in sugars than the random diets generated from consumed forage species only. Hind diets contained more soluble sugars but not more protein than simulated diets in all seasons. Contrary to our prediction, anti-nutritional compounds (ADL and tannins) were avoided only in winter. Compared to simulated diets, hinds consumed more tannins in spring and summer and more ADL in summer and autumn. We suggest that this was a consequence of selection for soluble sugars, because the preferred plant species, which had high soluble sugar concentrations, also contained a large proportion of the anti-nutritional compounds eaten. In winter, the grass-dominated diets contained more fibre (NDF) and less ADL than the simulated diets, indicating that hinds orient their feeding towards digestible fibres. The switch from a browser to a grazer diet was related to a change in the availability of the nutrients, mainly soluble sugars. In our study, grasses contained more soluble sugars and proteins than deciduous browse during winter. This calls into question the dichotomy usually assumed in the literature between grass and browse in terms of nutrient content.
