Currently, the trend of a healthy, tasty and natural diet has increased due to the focus on the relationship between food and health, which is why the food industry seeks to cause a potential impact on public health by providing greater nutritional value. This research was carried out in order to identify which method is moreeffective to prepare a healthy, safe food with high nutritional value. This systematic review was followed by following the PRISMA statement practice guideline for systematic reviews. The search was carried out in the databases: Science-Direct, and the Google Scholar platform. For this, the keywords (ultrasound homogenization, high pressure homogenization, food suspensions, fruit nectars) were considered during the years 2017 -2020. The result was that high pressure homogenization is more effective in prolonging life useful of food suspensions, as well as to reduce the total microbial load.
Infusions, in particular, are hot drinks made from the leaves, flowers, fruits, bark and roots of certain natural plants that contain medicinal properties, these have made it possible to counteract many diseases that have been generated throughout the human life cycle. Therefore, the present study aims to know the varieties of medicinal plants, the origin of sowing, compounds present in the plants, their effectiveness in infusions, benefit in diseases and unit operations from the review of scientific articles in recent years. 5 years. For this, the Prisma methodology was used, performing the inclusion and exclusion criteria in different electronic databases such as Redalyc, Scielo, Google Scholar, Taylor and Francis, Scopus, Ebsco Host, Science Direct and ProQuest, thus obtaining 27 articles included for your review. As results in the selected studies, it was found that the medicinal plants most used in infusions were cinnamon with 7.14%, green tea 5.7% and lemon verbena 4.29%. In addition, it was found that the most present compounds in plants were flavonoids with 23.64% and in terms of their effectiveness in infusions, antioxidants had the highest value with 28.05%. In conclusion, medicinal plants made in infusions with proper operation maintain the compounds provided by the plant and show a positive effect on metabolic syndrome diseases.
The objective of this investigation was to determine the treatment with the highest sensory acceptability of a filtering infusion based on Hibiscus rosa-sinensis, Mentha piperita L and Citrus sinensis peel. This research is of an applied type of experimental design, an untrained panel of 30 people over 18 years of age from the Trujillo district was used. A sensory evaluation sheet with a hedonic scale from 0 to 5 was applied as an instrument, which raised 4 treatments with different percentages of raw materials, as a result it was determined that treatment 3 with 28.5% cayenne flower, 52% of mint and 19.5% of orange peel obtained greater acceptability and complies with the physicochemical requirements with a humidity of 11.02%, pH 7.4 and ashes with 7.11%. Likewise, the microbiological results met the limits established for an infusion with 9x102 CFU/g for Enterobacteriaceae and 7x102 CFU/g for molds, being suitable for consumption. Finally, it was concluded thatin the evaluation of sensory acceptability, T3 was the most acceptable with a value of 4.8 considering that the taste had a higher preference with an average of 4.70, followed by smell with 4.66, color with 4.46 and appearance with 4.43.
Currently the excessive demand for solid resources is affecting ecosystems and generating negative impacts on the environment, one of these reasons is the generation of solid waste, therefore there is a need to provide methods, techniques, and procedures to reduce these impacts. The objective of this work was to determine the different solid waste management treatments for a sustainable final disposal during the 2017-2022 period. For this, a systematic review of 206 articles found in the Scopus andScienceDirect databases and search engines was carried out; of which 21 articles were selected that met our selection criteria. Finally, it was determined that there is a predominance of studies for the treatment of municipal and organic solid waste, while the most applied methods for said waste are composting, vermicomposting, incineration for energy generation, in addition to awareness and recycling, finally all these methods offer a sustainable final disposal.
