Untersuchungen an Cocosfett, Palmöl, Erdnußöl, Sojaöl, gehärtetem Erdnußöl und gehärtetem Fischöl zeigten, daß polyensäurereiche Öle und auch Fette tierischer Herkunft sich nicht für ein längeres Erhitzen in einem Fritierbetrieb eigne. Als Beurteilungskriterien dienten Gehalt an oxydierten Fettsäure, Verseifungsfarbzahl, Geschmack, Säurezahl, Rauchpunkt und Aussehen. Die Grenzwerte für die Genußtauglichkeit von Fritierfetten und die Aussagekraft der einzelnen Kennzahlen werden diskutiert. Schließlich wird eine neue Schnellmethode vorgestellt, mit der im Fritierbetrieb direkt der oxydative Verdorbenheitsgrad ohne chemische Vorkenntnisse ermittelt werden kann.
Es wird zunächst eine Übersicht über die Fettrohstoffe gegeben, die in der Bundesrepublik zur Herstellung von Brat‐ und Siedefetten dienen. Aufgrund ihrer unterschiedlichen Zusammensetzung verhalten sie sich bei längerem Erhitzen unter Fritierbedingungen sehr verschiedenartig. Einige Fette erfahren in relativ kurzer Zeit derartige geschmackliche Veränderungen, daß ihre Verkehrsfähigkeit nicht mehr gegeben ist. Die analytisch ermittelten Werte dagegen bewegen sich absolut innerhalb der erlaubten Grenzwerte. Andere Fettrohstoffe wiederum zeigen genau entgegengesetztes Verhalten. Sensorisch (Geschmack, Geruch, Aussehen) Können sie durchaus noch unauffällig sein, wenn die analytischen Werte eine Verkehrsfähigkeit bereits ausschließen. Von den üblichen Beurteilungskriterien ist der Rauchpunkt aus verschiedenen Gründen nur mit einiger Zurückhaltung verwendbar. Einmal sind trotz verbesserter Untersuchungsmethodik die ermittelten Werte gerade im Grenzbereich des noch Zulässigen von Labor zu Labor sehr unterschiedlich. Darüber hinaus zeigen auch die frischen Ausgangsfette erhebliche Differenzen in ihren Rauchpunkten, was beispielhaft an verschiedenen Raffinaten von Palmölen und gehärteten Erdnußölen gezeigt wird. Deshalb müßte auch die Empfehlung, ein Fett sei nicht mehr verkehrsfähig, wenn die Rauchpunkterniedrigung 50° gegenüber dem frischen Fett überschritten habe, kritisch gesehen werden. Die weiteren Grenzwerte wie 0.7% petrolätherunlösliche oxidierte Fettsäuren sowie‐27% säulenchromatographisch bestimmter polarer Anteile haben sich durchaus bewährt. Dabei verdient die Bestimmung der polaren Anteile wegen der einfachen Arbeitsweise, der schnelleren Durchführung und der geringeren Fehlerbreite den Vorzug. Zur Betriebskontrolle und zur Vorauswahl verdächtiger Fette hat der “Fritest” als Schnellmethode weiter an Beliebtheit gewonnen, da er einfach zu handhaben ist und Ergebnisse mit ausreichender Zuverlässigkeit liefert.
