O cultivo e a produção de batata-doce na Colômbia registram poucos excedentes para o mercado nacional, sua produção é de aproximadamente 6 t / ha, disse que a produção está centrada na região do Caribe colombiano, nos departamentos de Córdoba e Sucre; No entanto, o cultivo da batata-doce pode vir a ocupar um lugar importante para a indústria alimentícia, devido às suas contribuições nutricionais e ao seu alto teor de amido, considerado ideal para a produção industrial de farinhas e amidos. Esta investigação estudou as propriedades físico-químicas e funcionais do amido obtidas de duas variedades de batata-doce, onde foram analisadas a capacidade de absorção de água, viscosidade máxima, temperatura de gelatinização, sedimentação e estabilidade. Antes das determinações, as amostras foram secas com peso constante. Verificou-se que o amido de batata-doce amarelo resultou em melhor qualidade devido à sua menor solubilidade, maior absorção de água, maior poder de intumescimento e maior temperatura de gelatinização que o amido de batata-doce roxo, mostrando valores encorajadores para a indústria de alimentos como espessantes, estabilizadores e gelificantes em alimentos refrigerados e congelados.s en alimentos refrigerados y congelados.
Este artículo presenta el proceso de extracción de antocianinas de cascara berenjena, con etanol acidificado, temperaturas y tiempos de extracción. Los extractos de antocianinas se micro encapsularon evaluando la influencia de las condiciones de secado por aspersión en las propiedades fisicoquímicas de los extractos. Las variables fueron temperatura del aire de entrada (160°C y 190°C) y la concentración de maltodextrina (25%, 30% y 35%). Se realizó análisis de contenido de antocianinas, mediante espectrofotometría electrónica de barrido. La más alta concentración de antocianinas en cascara de berenjena (115 mg/100g) se obtuvo con 53 % etanol, 3 horas y a 29 °C. Durante la microencapsulación por secado en spray, se evaluó estadísticamente que la temperatura y el porcentaje de maltodextrina empleado en la microencapsulación influenció en la mayoría de las propiedades fisicoquímicas del extracto obtenido. The effect of frying conditions on immersion on moisture loss and oil content were studied at different times in two yam varieties: Diamante 22 and Pico Botella. The experimental data adjusted itself to the first order exponential model for humidity transfer (r > 0.9) for both cultivars. The humidity diffusion coefficient for the two varieties of yam fried at 140°, 160° and 180°C for 1 to 9 minutes were 8.11±0.76, 8.2±0.81, and 8.62 ±0.71*10-9 m2/s for the Diamante 22 variety, respectively, and 8.32±0.82, 8.38±0.78, 8.54±0.84*10-9 m2/s for the Pico de Botella variety. Activation energy was 24.43 kJ/mol for the Diamante 22 variety and 21.27 kJ/mol for the Pico de Botella variety. The results showed that there was higher oil absorption after 180 s and at 140°C while taking into account 0.377 kg water / kg solid moisture loss for Diamond 22 and 0.410 kg water / kg solid Pico de Botella at 180°C for 540 s.
