Este trabalho apresenta o desenvolvimento de um sistema de visão computacional que identifica e conta automaticamente as leveduras de cerveja viáveis e inviáveis. O objetivo é melhorar o tempo e a precisão dos resultados obtidos, em comparação com o método de contagem manual por especialistas comumente realizado na indústria cervejeira. O equipamento utilizado consiste em uma câmera de vídeo digital acoplada a um microscópio óptico, que transmite as imagens capturadas, em tempo real, para o computador. Duas abordagens foram testadas e implementadas, uma levando em consideração a morfologia e a cor das leveduras, e a outra usando aprendizado de máquina. Embora existam programas que contam leveduras automaticamente, este é o primeiro aplicativo que faz uso de técnicas de rede neural convolucional com Yolo para identificar leveduras, tornando os resultados mais precisos e confiáveis em comparação com métodos manuais. Experimentos foram realizados para medir o desempenho e a precisão do protótipo, que são apresentados neste artigo.
This paper presents the development of a computer vision system that automatically identifies and counts viable and inviable brewer's yeast, to improve the time and accuracy of results obtained compared to the manual expert counting method commonly performed in the brewing industry. The equipment used consists of a digital video camera coupled to an optical microscope, which transmits the captured images, in real time, to the computer. Two approaches were tested and implemented, one taking into account the morphology and color of yeasts, and the other using machine learning. Although there are programs that automatically count yeasts, this is the first application that makes use of convolutional neural network techniques with Yolo to identify yeasts, making the results more accurate and reliable compared to manual methods. Experiments were carried out to measure the performance and accuracy of the prototype, which are presented in this article.
