ResumoA adulteração do mel representa uma ameaça à segurança alimentar desse produto, tornandose uma questão ainda mais crítica quando se trata de méis com alta demanda e valor de mercado agregado. Nesse sentido, a busca por ferramentas que possam auxiliar na identificação de fraudes tanto por meio da adição de compostos ao mel como por meio da mistura de diferentes méis vem sendo alvo de pesquisas ao longo das últimas décadas. Portanto, esta revisão teve como objetivo abordar principalmente o uso do "fingerprint" cromatográfico/espectrométrico e da análise alvo (marcadores químicos) como ferramentas na avaliação da autenticidade de méis. Com base nas informações apresentadas, foi possível verificar o potencial dessas abordagens na detecção de fraudes em méis e a importância da continua investigação dessas e de outras ferramentas para a avaliação da autenticidade de méis.
