Boş zaman, Endüstri Devrimi ile insanların gündemine oturmuş ve bir ihtiyaç olarak algılanmıştır. Diğer yandan modern iş hayatının mesai tanımayan uygulamaları da yaşanmaya başlanmıştır. Bu bağlamda mesai sınırı olmayan işlerden biri akademidir. Akademisyenlerin kısıtlı olan boş zamanlarını nasıl değerlendirdiklerinin belirlenmesi iş yerindeki verimliliklerini yorumlamak açısından önemli olabilir. Bu çalışma, akademide bulunan Gastronomi ve Mutfak Sanatları bölümü öğretim elemanlarının kendi mutfakları için ayırdıkları serbest zamanı ortaya koymayı hedeflemektedir. Bu bağlamda, bu çalışma kapsamında Anadolu Üniversitesi Gastronomi ve Mutfak Sanatları Bölümü akademisyenleri örneği incelenmiştir. Çalışmada nitel araştırma yöntemleri kullanılmış ve derinlemesine bilgi alabilmek adına görüşmeler gerçekleştirilmiştir. Araştırma için alan yazına dayanarak özellikle evde geçirilen boş zaman ve demografik unsurlara ilişkin soruların yer aldığı yarı yapılandırılmış soru formu hazırlanmıştır. Katılımcılara, yarı yapılandırılmış soru formunda bulunan üç ana başlıktan oluşan toplamda on dört soru sorulmuştur. Katılımcıların izinleri alınarak görüşmeler ses kayıt cihazlı ile kayıt altına alınmıştır. 07.12.2018 -15.01.2019 tarihleri arasında gerçekleştirilen görüşmelerin deşifreleri betimsel analize tabi tutularak iki başlık altında incelenmiştir: Mutfakta geçirilen zaman ve gıda ürünleri kullanımı. Araştırma sonucuna göre GMS bölümü akademisyenlerinin çalışma alanları olmasına rağmen mutfakta yeterince zaman geçiremedikleri, geçirilen zamanın ise aile ihtiyaçları boyutunda kaldığı anlaşılmıştır. Kullanılan gıda ürünlerinde ise bilinçli bir tüketimi tercih ettikleri araştırma sonucu tespit edilen sonuçlardandır.
