Purpose The purpose of this paper is to gain a general holistic view of implications of the growing and highly relevant customer segment of elder consumers for the food demand chain (food retail, production, logistics, and business informatics) in Germany. Design/methodology/approach This paper takes a holistic demand-chain approach that is based on interviews with 36 German food consumers aged 65-87 and with 50 experts from manufacturing, trade, logistics, and business informatics as well as a survey with 1,288 consumers above 64 years of age and 682 consumers below 65 years of age. Findings Physical, statistical, psychological, social, and behavioural characteristics of elder German consumers may influence location, services, and layout of food retail, food variety, sizes, packaging, and labelling, food production, transportation, and storage volumes and capacities, as well as facility location, route, and inventory planning. The social function of grocery shopping especially for single consumers, intergenerational products and services, home-delivery services especially to rural areas, as well as decentralisation and regionalisation are expected to gain importance. Logistics and industry 4.0 can facilitate the efficient and effective supply of food. Originality/value This research is the first to investigate the needs and wants of elder German food consumers and their implications for the German food demand chain in a more holistic demand-chain approach.

Purpose Elder German grocery shoppers are a growing, heterogeneous, and highly relevant and attractive, but under-researched market segment. In order to understand them and their grocery shopping motivations better and target them efficiently and effectively, the purpose of this paper is to identify dimensions of their shopping motivations and segment them based on these dimensions. Design/methodology/approach In total, 26 grocery store-choice criteria were identified in a thorough literature review and focus-group interviews with 36 elder German consumers aged 65 and older. In a subsequent survey, the importance of these criteria was rated by 1,288 German shoppers of the same age group. A principal component and cluster analysis were performed to identify dimensions of store-choice criteria and segments of elder German grocery shoppers. Multivariate analysis of variance, analysis of variance and discriminant analysis were used to test for statistically significant differences between the clusters. Findings Basic quality considerations, shopping experience and social interaction, service and assistance, price consciousness, product orientation, convenient location and quick service and packaging requirements influence the grocery store choice of elder German consumers in decreasing order of variance explained. The cluster analysis revealed indifferent, leisure, convenience, assistance-oriented, no frills, product-oriented and service-oriented elder German shoppers, which differ in their shopping motivations statistically and significantly. These clusters are described and contrasted in detail to derive managerial implications. Originality/value This research provides the first store-choice component analysis and cluster analysis for elder German grocery shoppers. This can help food retail to reach this attractive target group more efficiently and effectively and improve the food supply of elder German consumers.

Nearly every eighth German hospital faces an elevated risk of bankruptcy. An inappropriate use of inventory management practices is among the causes. Hospitals suffer from demand and lead time uncertainty, and the current COVID-19 pandemic worsened the plight. The popular business logistics concept of risk pooling has been shown to reduce these uncertainties in industry and trade, but has been neglected as a variability reduction method in healthcare operations research and practice. Based on a survey with 223 German hospitals, this study explores how ten risk pooling methods can be adapted and applied in the healthcare context to reduce economic losses while maintaining a given service level. The results suggest that in general risk pooling may improve the economic situation of hospitals and, in particular, inventory pooling, transshipments, and product substitution for medications and consumer goods are the most effective methods in the healthcare context, while form postponement may be unsuitable for hospitals due to the required efforts, delay in treatments, and liability issues. The application of risk pooling in healthcare requires willingness to exchange information and to cooperate, adequate IT infrastructure, compatibility, adherence to healthcare laws and regulations, and securing the immediate treatment of emergencies. Compared to manufacturing and trading companies, hospitals seem to currently neglect the variability reducing effect of risk pooling.

Purpose Turkish food retail in Germany fulfils social, cultural, and economic functions, but is threatened by shifts in demand and competition. The purpose of this paper is to give a holistic, interdisciplinary, and action-oriented view of the challenges and opportunities of Turkish food retail in Germany. Design/methodology/approach Based on a qualitative study using expert interviews with 18 businesspersons from different parts of the Turkish food supply chain in Germany and a qualitative survey of 349 working Bachelor students of trade, industrial, and logistics management as well as business informatics, this paper takes a value chain approach. Findings The main opportunities of Turkish food retail in Germany lie in increasing its efficiency, using purchasing associations and brand building, targeting well-funded German consumers, offering fluent Turkish-German customer service and shopping experiences, providing appealing shop locations, designs, and layouts, product range adjustments, and promotions. Research limitations/implications This paper is based on a small scale qualitative study as access to Turkish food retail experts is limited. The sample was carefully selected to be a fair representation of the Turkish food supply chain. As for the consumers, only students have been surveyed so far, because they were targeted by the experts interviewed. In order to allow wider generalizations, this sample could be extended. Originality/value This study complements and enhances the very limited research on Turkish food retail in Germany. For the first time, the call for a holistic, interdisciplinary, and action-oriented examination of the challenges and opportunities of Turkish food retail in Germany is answered from a value chain perspective.

PurposeLogistics service providers (LSPs) may invest a lot of time in tenders unsuccessfully, as they do not meet the expectations of logistics service users (LSUs). In order to help them classify and target their customers more efficiently and effectively and make logistics outsourcing more successful for both LSUs and LSPs, this paper analyzes underlying dimensions of criteria German manufacturing and trading companies actually use in selecting an LSP and clusters of LSUs based on these dimensions.Design/methodology/approachA questionnaire survey with 110 manufacturing and 135 trading companies was conducted in Germany. Principal component analysis (PCA), cluster analysis, multivariate analysis of variance, analysis of variance and discriminant analysis were performed on the sample data.FindingsPCA revealed eight dimensions of LSU criteria in selecting LSPs and that cost alone seems not decisive. Based on these dimensions, cluster analysis produced nine LSU groups. These groups differ the most in the selection criteria dimensions cost-performance ratio, operational collaboration, quality and locations. Recommendations for servicing these groups are given. The two largest groups, which make up 43.5%, seem not that demanding and price sensitive. The selection criteria dimensions and LSU groups enable LSPs to classify and target their customers more efficiently and effectively, to evaluate and develop their core competencies, and contribute to successful logistics-outsourcing relationships.Originality/valueThis research is the first to examine selection criteria dimensions and resulting clusters of German manufacturing and trading companies in order to make logistics outsourcing more successful.

Purpose The square root law (SRL) is a popular model for assessing inventory levels when changing the number of warehouses. Previous empirical research, however, has shown that mostly its underlying assumptions do not hold in practice. This sparks the question how inaccurate the SRL’s results are. The paper aims to discuss this issue. Design/methodology/approach In 26 company cases of reducing the number of warehouses, the estimation error of the SRL is analysed irrespective of its underlying assumptions. Findings The analysis reveals an average estimation error for total inventory of 27.85 per cent (median=27.84 per cent), but a high variability across the cases. The SRL seems to mostly overestimate inventory savings from centralisation and inventory increases from decentralisation. Managers should only use the SRL if inventory depends on the number of warehouses in their situation, i.e. if they use the economic order or production quantity policy and safety factor approach. Suggestions for coping with the SRL’s estimation error are given. Research limitations/implications This paper is based on the 26 cases that could be found in a thorough literature review in the ten most widely spoken languages and that contained or allowed to deduce the necessary information. In order to enable wider generalisations, this sample could be extended. Originality/value Most past research has been more theoretical in nature. This research is the first to investigate the SRL’s estimation error using a variety of company cases and how to cope with this error.
