Introducción: Los estudiantes universitarios se encuentran en un periodo crítico para el desarrollo y consolidación de estilos de vida futuros. El objetivo fue conocer los hábitos alimentarios, preferencias alimentarias y habilidades culinarias del alumnado de primer curso de las distintas titulaciones de la Universidad de Huelva.Material y Método: Estudio descriptivo transversal durante el año académico 2015-2016 de una muestra final de 756 alumnos. La adherencia a la Dieta Mediterránea se ha medido a través del cuestionario KIDMED. El resto de variables se han recogido mediante un cuestionario ad hoc. El análisis de datos se realizó mediante el PSPP, calculándose medias, desviaciones típicas y porcentajes para el análisis descriptivo, prueba de Chi-cuadrado y ANOVA para el análisis relacional.Resultados: El 20,4% del alumnado tiene un nivel óptimo de adherencia a la Dieta Mediterránea, frente al 65,3% que posee un nivel medio y un 14,3% bajo. Los alimentos preferidos son pollo (62,2%), pasta (58,2%), cerdo (50,4%) y las patatas fritas (45,9%). Entre los alimentos que saben preparar están la pasta, (93,8%), patatas con huevo (90.2 %), pizza precocinada (88.7 %), zumo (86.1 %) y carne a la plancha (85.8 %).Conclusiones: La dieta de los estudiantes onubenses es muy similar a la de otras poblaciones universitarias estudiadas. Se encontró preferencia por las carnes y alimentos ricos en glúcidos, en detrimento de la fruta y la verdura. Se observó un déficit en las habilidades culinarias, lo cual podría explicar el deterioro del patrón alimentario de éstos y orientar futuras intervenciones. The objective of this study was to know the eating habits, food preferences and culinary skills of first-year students on different degree courses at the University of Huelva.Material and Method: Cross-sectional descriptive study in academic year 2015-2016 of a sample of 756 students. Adherence to the Mediterranean Diet was measured by the KIDMED questionnaire. The rest of the variables were measured by an ad hoc questionnaire. Data analysis was performed using the PSPP programme, calculating arithmetic means, standard deviations and percentages for the descriptive analysis, with Chi-square test and ANOVA for the relational analysis.Results: 20.4% of students have an optimal level of adherence to the Mediterranean Diet, compared to 65.3% % with an average level and 14.3% with low adherence. Favourite foods cited were chicken (62.2%), pasta (58.2%), pork (50.4%) and chips (45.9%). The types of food the students knew how to prepare included pasta (93.8%), egg and chips (90.2%), precooked pizza (88.7%), fruit juices (86.1%) and grilled meat (85.8%).Conclusions: Huelva university students diet is very similar to that of other university populations studied. We found a preference for meat and foods rich in carbohydrates, to the detriment of fruit and vegetables. A lack of culinary skills was observed, which could explain the deterioration in eating habits; this is a pointer to future interventions.
La siguiente investigación indaga en la potencialidad de la perspectiva educativa de trabajo por proyectos para la educación nutricional. Se realiza un estudio de casos con el alumnado y profesorado de tercero de Educación Primaria utilizando diversos instrumentos de investigación como cuestionarios y entrevistas, entre otros. Entre los resultados se detectan mejoras en la calidad de la dieta, aumentando el consumo de frutas y verduras, reduciéndose el de golosinas, al tiempo que mejora la calidad del desayuno. Las conclusiones del estudio aluden a la idoneidad de la perspectiva educativa de trabajo por proyectos para el tratamiento de la educación alimentaria
Resumen. El objetivo de este trabajo es conocer y contrastar la valoración del profesorado sobre los libros de texto como desarrolladores del currículum oficial y garantes de ciertas recomendaciones de la didáctica general y específica. El uso de una metodología integrada ha permitido conjugar dos líneas de investigación en un sólo estudio en busca de interpretaciones más elaboradas de una misma realidad. Mediante el análisis de contenido hemos obtenido una visión muy aproximada del tratamiento didáctico que los manuales imprimen a estas enseñanzas, al tiempo que la administración de un cuestionario a una muestra de 863 docentes nos ha permitido conocer sus concepciones respecto a nuestros temas de estudio. Las principales conclusiones giran en torno a la debilidad del material para dar respuesta a las demandas normativas y bibliográficas, la presencia de un amplio sector del profesorado que conoce las limitaciones de los textos escolares, el descontento expreso de una pequeña minoría y, sin embargo, el uso mayoritario, y en muchos casos exclusivo, de este material en las aulas. Esta paradoja nos obliga a seguir explorando las representaciones didácticas propias de los docentes, así como los caminos para alcanzar una mayor sintonía entre concepciones y prácticas. El estudio que se presenta perseguía conocer y mejorar los hábitos de descanso, desayuno y merienda escolar de un grupo de escolares a partir de una propuesta educativa según el enfoque comunitario. Se ha realizado un estudio longitudinal en tres fases a partir de un diseño cuasi-experimental de pretest y postest con 48 estudiantes de 3º de Educación Primaria. Los resultados evidenciaron que en el primer periodo solo un 3.8% de la muestra realizaba un desayuno completo frente al 32.8% de la tercera fase. Asimismo, se registró una mejora en el consumo de fruta, que aumentó de un promedio del 5.7% a un 24.9%. Las conclusiones aluden al positivo impacto de la intervención de corte comunitario en la mejora de los hábitos.
El estudio que se presenta tiene una finalidad diagnóstica en relación a los hábitos de vida y alimentación de un grupo de escolares. Se persigue conocer los patrones alimentarios (desayuno y merienda escolar), actividad física y horas de sueño en dos aulas de tercero de Educación Primaria de un centro andaluz. El estudio utiliza una metodología de corte cuantitativo, a partir de un cuestionario administrado a 46 alumnos-as obteniéndose 410 respuestas a lo largo de dos semanas. Los resultados revelan que la práctica totalidad del alumnado ingiere algún alimento antes de acudir al centro escolar, si bien la composición nutricional del mismo es insuficiente. Aproximadamente siete de cada diez alumnos-as expresan la necesidad de ingerir alimento en el momento de responder al cuestionario, una hora antes del recreo. Analizando los ingredientes que componen la merienda escolar destacan los zumos y batidos envasados, bocadillos de embutidos y galletas. El análisis de la dimensión de actividad física revela un escenario en el que la muestra se divide equitativamente en función de sus hábitos, predominando no obstante actividades de corte sedentario. Mientras cinco de cada diez alumnos-as no realiza actividad física por las tardes, la mayoría dedica un tiempo considerable a ver la televisión. Finalmente, el análisis de las horas de sueño evidencia que el seis de cada diez alumnos-as duermen una media de 9,2 h., situándose así en el rango mínimo recomendado para esta edad. Una vez finalizado el diagnóstico se realizan propuestas de intervención en el marco del enfoque comunitario. The present study has a diagnostic purpose in relation to the eating habits and lifestyle of a group of schoolchildren, once symptoms of potential imbalances have been detected by the teaching staff. Eating patterns (breakfast and school afternoon snack), physical activity and rest levels are studied in two third-year Primary Education classrooms in an Andalusian school. The study uses a quantitative methodology, based on a questionnaire administered to 46 students, obtaining 410 responses over two weeks. The results reveal that almost all students eat some food before going to school, although its nutritional composition is limited. Approximately seven out of ten students reported they were hungry while answering the questionnaire, one hour before the school break. As for the ingredients that make up the school snack, they include packaged juices and smoothies, cold cut sandwiches and cookies, with a marginal presence of fruit. The analysis of the physical activity dimension reveals that sedentary activities predominate slightly. While five out of ten students do not do physical activity in the afternoons, the majority spend considerable time watching television. Finally, the analysis of sleep hours shows that six out of ten students sleep an average of 9.2 hours, just within the minimum recommended range. Finally, intervention proposals are made within the framework of the community-led approach.
