Dynamiques et stratégies de production au domaine d'Avully-en-Genevois à la fin du XVIII e siècle Fulgence Delleaux Résumé L'objectif de cet article est de saisir l'impact de la croissance démographique de Genève et les nouvelles habitudes alimentaires de ses habitants à la fin du XVIII e siècle sur le fonctionnement d'un grand domaine agricole voisin. Jacques-André Mallet, grand exploitant au village d'Avully, est incité à mettre en adéquation ses différentes productions et techniques agricoles avec la nouvelle donne du marché urbain genevois. Les écrits de Mallet permettent de restituer précisément les modalités et le degré de ces diverses transformations et de constater également que celles-ci sont encouragées et confortées par des lectures d'ouvrages d'agronomie. Des ouvrages qui se diffusent au même moment et dont on mesure désormais l'attention réelle que leur porte un membre de l'élite agricole.
Résumé Les rapports administratifs, repris dans un récent article, dépeignent couramment les charges importantes, à la limite de la non-rentabilité, qu’occasionne la tenue d’un troupeau de moutons par un grand exploitant du Hainaut français au xviii e siècle. En observant le chiffre d’affaires de la vente des laines d’un censier de l’Avesnois et le coût de l’entretien de son troupeau (nourriture, tonte, salaire du berger, etc.), à partir de son livre de raison, nous montrons qu’il n’en est rien. Un cultivateur ne va évidemment pas se vanter à un agent de l’État de réaliser de juteux bénéfices grâce aux produits dérivés de son élevage ovin. Il se plaindra toujours, entre autres, « des difficultés financières de l’élevage ovin provoquées par les charges du berger ».
Résumé L’objectif de l’article est d’appréhender le changement agricole au xviii e siècle dans l’une des principales régions de la France septentrionale, le Hainaut, grâce à l’utilisation sérielle et qualitative d’une source assez rare pour cette province, les inventaires après-décès de censiers. Indicateurs des transformations agricoles au sens le plus large (de l’intérieur fermier aux techniques culturales en passant par les pratiques de consommation domestique et le perfectionnement de l’équipement agricole), les inventaires proposent un éclairage différent sur la question de la croissance agricole. Celle-ci ne se résume pas uniquement à la seule augmentation de la productivité céréalière à l’hectare. En effet, d’autres aspects présentés dans cet article laissent entrevoir de réelles mutations chez les plus riches exploitants et, dans une certaine mesure, pour une partie des campagnes du Hainaut.
