Sulfur is an essential element in determining the productivity and quality of agricultural products. It is also an element associated with tolerance to biotic and abiotic stress in plants. In agricultural practice, sulfur has broad use in the form of sulfate fertilizers and, to a lesser extent, as sulfite biostimulants. When used in the form of bulk elemental sulfur, or micro- or nano-sulfur, applied both to the soil and to the canopy, the element undergoes a series of changes in its oxidation state, produced by various intermediaries that apparently act as biostimulants and promoters of stress tolerance. The final result is sulfate S+6, which is the source of sulfur that all soil organisms assimilate and that plants absorb by their root cells. The changes in the oxidation states of sulfur S0 to S+6 depend on the action of specific groups of edaphic bacteria. In plant cells, S+6 sulfate is reduced to S−2 and incorporated into biological molecules. S−2 is also absorbed by stomata from H2S, COS, and other atmospheric sources. S−2 is the precursor of inorganic polysulfides, organic polysulfanes, and H2S, the action of which has been described in cell signaling and biostimulation in plants. S−2 is also the basis of essential biological molecules in signaling, metabolism, and stress tolerance, such as reactive sulfur species (RSS), SAM, glutathione, and phytochelatins. The present review describes the dynamics of sulfur in soil and plants, considering elemental sulfur as the starting point, and, as a final point, the sulfur accumulated as S−2 in biological structures. The factors that modify the behavior of the different components of the sulfur cycle in the soil–plant–atmosphere system, and how these influences the productivity, quality, and stress tolerance of crops, are described. The internal and external factors that influence the cellular production of S−2 and polysulfides vs. other S species are also described. The impact of elemental sulfur is compared with that of sulfates, in the context of proper soil management. The conclusion is that the use of elemental sulfur is recommended over that of sulfates, since it is beneficial for the soil microbiome, for productivity and nutritional quality of crops, and also allows the increased tolerance of plants to environmental stresses.
En este trabajo se determinaron los compuestos fenólicos totales, su actividad antioxidante y sus interrelaciones, y se analizó el componente genético en la expresión de estos compuestos químicos en cruzas simples de maíz (Zea mays L.). Para el análisis químico se utilizaron muestras de grano de 38 materiales genéticos (33 cruzas simples mas cinco testigos). Se computó un análisis de varianza con un diseño completamente aleatorio, se obtuvieron correlaciones entre variables y se hizo un análisis genético con las cruzas simples. Se encontraron diferencias estadísticas (P ≤ 0.01) entre cruzas simples, testigos, así como en la comparación cruzas vs. testigos, para los compuestos fenólicos y la actividad antioxidante. Los compuestos fenólicos totales no estuvieron correlacionados de manera directa con la actividad antioxidante ni con el contenido de antocianinas. En la actividad antioxidante y el contenido de antocianinas se encontró correlación positiva (r = 0.72*). En el análisis genético las líneas hembras mostraron componentes de varianza genética superiores a las de los probadores, tanto en compuestos fenólicos como en actividad antioxidante. En los compuestos fenólicos la expresión fue determinada por los efectos de interacción de los dos progenitores, en tanto que la actividad antioxidante estuvo determinada principalmente por los efectos genéticos de las líneas hembra.
The kernel hardness of 21 corn (Zea mays L.) cultivars was studied in relation to texture, flotation index, size and arrangement of the starch granules within the endosperm, using scanning electron microscope. Hardness (7.6 – 16.9 kg-f) was related to the size and the arrangement of the starch granules within the endosperm. Hard corn had large and small polygonal granules in a compact protein matrix. Data obtained from scanning electron microscopy showed a positive correlation of hardness with density and starch granule size, and a negative correlation with flotation index and crystallinity.
En los últimos años se ha incrementado el estudio, mejoramiento y cultivo de maíces nativos (Zea mays L.), con la finalidad de orientarlos hacia un uso final específico y así aumentar su valor en beneficio de los productores. El presente trabajo tuvo como objetivo determinar el posible uso final de seis maíces criollos de razas diferentes (Bolita, Elotes Cónicos, Cónico Norteño, Pepitilla, Pinto y Zapalote), de acuerdo con sus características físicas, químicas, térmicas y de calidad nixtamalera. Las características físicas determinadas fueron: peso de cien granos, dureza, índice de flotación, cristalinidad y tamaño de gránulo de almidón, porcentaje de endospermo, pericarpio y germen; las químicas: proteínas, cenizas y lípidos; las térmicas: entalpía, temperatura de gelatinización y viscosidad relativa; y las de calidad nixtamalera: rendimiento y textura para masa y tortilla. Se aplicó un análisis por componentes principales para definir cuáles maíces tienen un uso final específico en la industria. Con esta metodología se encontró que la accesión de la raza Bolita cumplió con las características necesarias para ser destinada a la industria de las botanas, la accesión de la raza Cónico Norteño a la industria de las harinas instantáneas; las accesiones de las razas Cónico Norteño, Zapolote y Pepitilla a la industria de la masa y la tortilla; las accesiones de las razas Pinto y Elotes Cónicos a la industria de la molienda seca.
La diversidad genética de los grupos raciales ha sido determinada principalmente para caracteres de planta, fisiológicos y agronómicos, pero pocos son los trabajos que relacionan las características de calidad y su uso en la alimentación para la clasificación de germoplasma. En el presente trabajo se caracterizaron 86 accesiones de maíz (Zea mays L.) con base en atributos del grano y su calidad tortillera y su posible uso para la clasificación de genotipos. Las 86 accesiones corresponden a 45 razas y a cinco grupos raciales. Se determinaron características del grano (tamaño, largo, ancho, grosor, gravedad específica, peso de mil granos, dureza) y de calidad tortillera (capacidad de absorción de agua, pérdida de peso, rendimiento de masa y tortilla, y resistencia al corte de tortillas). Se detectó una asociación significativa (P≤0.05) dentro de los grupos raciales, tanto en caracteres de grano como en los de calidad tortillera. El análisis de componentes principales permitió diferenciar a los grupos raciales, lo que demostró que los caracteres de calidad tortillera contribuyen a la caracterización adicional de las accesiones, a pesar de la amplia variación genética. Asimismo, se encontró asociación entre grupos de accesiones con base en la clasificación por sus usos en alimentos, lo que corrobora la complementariedad de ambos grupos de atributos en la caracterización de germoplasma.
Traditional agricultural system is referring to the maize production based on indigenous or farmers knowledge and practices that have been developed through many generations. In the area of study, genetic maize diversity was explored by the expression of quantitative traits of the ear and the race classification approach. Evaluation results indicated that the native populations adapted to the transition and highland (above 2000 masl) areas, showed a contrasting yield response when they were evaluated at the intermediate environment; whereas, those populations adapted to the lowland and intermediate altitudes showed a satisfactory yield performance in both environments. The above performance pattern is essential because it may be useful to identify favorable alleles that, in a local population per se or through genetic combination, results in population changes in allele frequencies that could mitigate the effects of climate changes, particularly in maize populations adapted to highland altitudes. Selection procedures applied to a local adapted population can be managed attending different goals, including the conservation of genetic diversity (per se selection), and to develop novel germplasm. The introgression of foreign germplasm into a local population and the application of three selection cycles resulted in a novel variety (JAGUAN) adapted to a regional northeast Mexico environmental conditions.
