Banana, corn and sago are well recognised as excellent source of phytochemicals and macronutrients. It has been developed composite flour that has high antioxidant and synergist effect on the activity of three plants.The objective of this study was to evaluate phytochemical content and to determine antioxidant activity in composite flour from banana, corn and sago.The extracts from composite flour were measured for phytochemical content and antioxidant activities using spectroscopic method.The results showed that extraction of cosolvent mixtures had significant influence on phytochemicals content and antioxidant activity. The highest total phenolic content was found in 80% methanol and 80% ethanol for F1 and F2, whereas F3 was found in 80% acetone in composite flour. In addition, acetone 80% in F3 showed the highest total carotenoid content followed with F2 and F1. Conversely, 80% acetone in F2 showed the highest free radical scavenging activity comparable that of F1 and F3.The results also showed that 80% acetone in F3 were found highest total antioxidant capacity than F1 and F3. The results suggest that 80% acetone to extract phenolic phytochemicals in composite flour from banana, corn and sago.
Beras analog merupakan tiruan dari beras yang terbuat dari bahan-bahan seperti umbi-umbian dan serealia yang bentuk maupun komposisi gizinya mirip seperti beras. Tujuan penelitian ini yaitu menganalisis senyawa dan aktivitas antioksidan dari beras analog sagu baruk dan ubi jalar ungu. Senyawa antioksidan yang diuji yaitu total fenolik, sedangkan aktivitas antioksidan yaitu aktivitas penangkal radikal bebas yang diuji secara spektrofotometri. Hasil penelitian menunjukkan bahwa beras analog mengandung total fenolik tertinggi pada F1 (Tepung sagu baruk dan tepung ubi jalar ungu dengan konsentrasi 50%) yaitu sebesar 43,16 mg/mL sampel dan memiliki aktivitas penangkal radikal bebas sebesar 93,92%. Kandungan total fenolik berkorelasi dengan aktivitas penangkal radikal bebas dengan nilai koefisien korelasi r = 0,983. Beras analog dari sagu baruk dan ubi jalar ungu berpotensi sebagai antioksidan.
ABSTRAK Virgin Coconut Oil (VCO) merupakan produk olahan kelapa tanpa pemanasan. VCO merupakan produk yang memiliki aktivitas antioksidan. Tujuan penelitian yaitu menguji aktivitas antioksidan Virgin Coconut Oil yang diberikan pencahayaan. Sistem fotooksidasi menggunakan kota cahaya yang dimodifikasi menggunakan lampu fluorescen. Fotooksidasi VCO menggunakan eritrosin sebagai sensitizer. Aktivitas antioksidan diuji menggunakan metode penangkalan radikal bebas DPPH, selanjutnya nilai IC50 ditentukan menggunakan analisis probit. Hasil penelitian menunjukkan bahwa semakin tinggi konsentrasi VCO maka aktivitas antioksidan akan semakin tinggi, nilai IC50 sebesar 12,02%. Aktivitas antioksidan Virgin Coconut Oil yang dicahaya selama 7 jam mengalami menurunan menjadi 96,13%. Larutan VCO yang mengandung eritrosin mengalami penurunan absorbansi sebesar 0,121 selama proses fotooksidasi. Kesimpulan penelitian ini ialah cahaya menyebabkan reaksi fotooksidasi sehingga menurunkan aktivitas antioksidan VCO.ABSTRACT Virgin Coconut Oil is a coconut processed product without heating. VCO is a product that has antioxidant activity. The research objective was to test the antioxidant activity of Virgin Coconut Oil under lighting. Photooxidation system using a modified light box of fluorescent light, while its antioxidant activity was tested using the DPPH free radical scavenging method, the IC50 value was determined using probit analysis. The results showed that the higher the VCO concentration, the higher the antioxidant activity. Antioxidan activity of Virgin Coconut Oil that is exposed to light decreased to 96.13%. The absorbance of VCO solution containing erythrosine as sensitizer decreased to 0.121 due to photooxidation. The conclusion of this study is that light will cause a photooxidation reaction, thereby reducing the antioxidant activity of VCO.
