A falta de qualidade no leite pode ocasionar perdas econômicas e tecnológicas significativas tanto para a indústria, como para produtores e consumidores. O presente trabalho teve como objetivo avaliar as características físico-químicas e higiênico-sanitárias do leite cru e da água utilizada na produção das propriedades leiteiras do Município de Teresina, PI. Foram coletadas e analisadas 12 amostras de leite e 12 amostras de água. Para as análises físico-químicas do leite utilizou-se o analisador de leite Ekomilk total e o acidímetro de Dornic. Para as análises microbiológicas do leite e da água realizou-se Contagem Bacteriana Total (UFC/mL) e para detecção de coliformes totais e E.coli (NMP/100mL na água utilizou-se o Colilert® (IDEXX). Assim verificou que 100% das propriedades analisadas estão em desacordo com os padrões exigidos para os estabelecimentos de produção de alimento de origem animal, não correspondendo simultaneamente às qualidades requeridas para a qualidade do leite e potabilidade da água.
