OBJETIVO: presentar los resultados del estudio para detección de Toxoplasma gondii en la carne de cerdo de los mercados municipales de la ciudad de Guatemala, para evaluarla como potencial fuente de infección, ya que la carne de cerdo cruda o insuficientemente cocida representa una de las fuentes de infección de Toxoplasma gondii más comunes a nivel mundial. Este protozoo es causante de una de las tres enfermedades de transmisión alimenticia más importantes. MÉTODO: se colectaron 250 muestras de carne mediante muestreo aleatorio de puestos de venta en mercados municipales de la ciudad de Guatemala, a las muestras colectadas se les realizó la prueba de qPCR. RESULTADOS: todas las muestras fueron negativas, debido a que el 68% de la carne de cerdo en los mercados municipales proviene de granjas tecnificadas que siguen medidas de bioseguridad y trazabilidad, se puede inferir que los esfuerzos de las producciones tecnificadas bajo la guía de los servicios veterinarios oficiales en bioseguridad han tenido un efecto positivo que se ve reflejado en la ausencia de T. gondii en las muestras colectadas. CONCLUSIÓN: no se descarta la carne de cerdo como potencial fuente de infección por lo que se deben realizar más estudios en la cadena epidemiológica y de producción de toxoplasmosis en cerdos.
La resistencia a los antimicrobianos es un problema de salud pública a nivel mundial que va en aumento y se ve reflejada en la falta de eficacia de los tratamientos de infecciones bacterianas con antibióticos tanto en humanos como en animales. El presente estudio tuvo como objetivo determinar la resistencia a los antibióticos de cepas de Escherichia coli aisladas en carne de cerdo en los mercados municipales de la ciudad de Guatemala. Se identificó los antibióticos que presentan mayor resistencia y los que tienen mayor sensibilidad in vitro frente a las cepas de E. coli aisladas a partir de las 76 muestras de carne de cerdo colectadas. Se realizó un muestreo aleatorio simple con afijación proporcional por mercado. Para la identificación de las cepas de E. coli se utilizó la prueba de IMViC y para la identificación de la resistencia a los antimicrobianos se utilizó la prueba de Kirby Bauer empleando 9 antibióticos. Se aisló E. coli en el 55% (42/76) de las muestras. Se evaluó la resistencia en las 42 cepas aisladas; se detectó resistencia a tetraciclina (83%), a neomicina (50%) y a sulfametoxasole + trimetoprim (50%). La sensibilidad obtenida fue mayor con ceftriaxona (91%), amikacina (83%) gentamicina (65%) y ácido nalidíxico (65%). Todos los ailados presentaba resistencia a por lo menos un antibiótico y se determinó que 83% (35/42) presentaban resistencia a por lo menos 2 antibióticos y 50% (21/42) presentaban resistencia a 3 antibióticos o más.
