-glucanas. Este trabalho avaliou a concentração de
-glucanas no cultivar de aveia IAC 7 e seus produtos, para verificar se existe alteração no teor desta fibra no decorrer do processamento. O farelo apresentou o maior teor de
-glucanas (9,51± 2,08%), diferindo estatisticamente dos demais produtos (P<0.05). A farinha apresentou os menores teores, com média de 3,74± 0,90%. Não houve diferença estatística entre o conteúdo de
