RESUMOA Pereskia aculeata Mill. é considerada um complemento nutricional devido ao seu conteúdo proteico, fibras, ferro, cálcio, dentre outros, podendo ser consumida in natura e coccionada e ser usada em várias preparações, como farinha, saladas, refogados, sopas, omeletes, pães, bolo, tortas, massas. Pode ser encontrada da Bahia ao Rio Grande do Sul, sendo considerada uma planta rústica e persistente que se desenvolve em uma variedade de solos. É de interesse para a indústria alimentícia e farmacológica, por apresentar, além do alto teor de proteínas, lisina e mucilagem, além dos compostos fenólicos, importantes antioxidantes. Dessa forma, objetivou-se avaliar a atividade antioxidante de Pereskia aculeata Mill. submetida a diferentes processos de secagem e seus extratos, utilizando para tal, diferentes métodos de captura de radicais livres e realização de triagem fitoquímica qualitativa em extratos aquosos. As amostras de folhas da espécie Pereskia aculeata Mill. apresentaram-se como uma potencial fonte de compostos antioxidantes e fenólicos, sendo excelentes fontes de proteínas e fibras, com potencial nutricional para dietas alimentares. O vegetal in natura demonstrou maior teor de proteínas e carboidratos em comparação às demais amostras. O horário de colheita, bem como a forma de secagem se mostrou influente sobre o teor de fibras totais, observando-se redução significativa nas amostras colhidas às 20h (secas à sombra e ao sol) e colhidas às 8h (secas à sombra) em relação à planta in natura. Quanto aos antioxidantes, o teor de antocianinas mostrou-se significativamente superior na planta in natura em relação às demais. Os métodos de DPPH e ABTS não denotaram diferenças significativas entre as amostras. Foi observada presença de metabólitos alcaloides, flavonoides, taninos e saponinas respectivamente e indicação de resultado para reação negativa de ausência para glicosídeos antraquinômicos. É uma planta com apelo farmacológico e nutricional, devido a capacidade da Pereskia aculeata Mill. em inibir a formação de radicais livres, pela atuação como antioxidante, justificando a importância da inclusão da planta na alimentação da população. Torna-se, portanto, um importante objeto de pesquisa, bem como, já se apontam promissores resultados no que tange à saúde e nutrição.
