Several studies in different countries have been conducted to investigate factors affecting food choices. The objective of this study was to understand the motivations of specific food and beverage choices for different eating occasions in a typical diet of the Turkish people. A convenience sample of 141 respondents from seven different geographical regions in Turkey completed an online survey questionnaire that included questions about demographic information and details about their latest eating occasion. Respondents reported all of their motivations for choosing each food/beverage item reported for that specific eating occasion. Results indicated that different motivations played different roles in food choices of people in Turkey. Liking was a key characteristic for all eating occasions, but key natural concerns were even more important at breakfast, and need and hunger were more important for a mid-afternoon snack. Lunch involved additional motivations such as Sociability, Variety Seeking, and Social Norms. In addition to Liking, choices of different food groups were also driven by other motivations such as Habits, Convenience, Need and Hunger, Natural Concerns, and Health. This study helped better understand the current dietary patterns of Turkish people as well as the motives underlying their choices of foods and beverages for different meals and snacks. These findings could be useful for dietary campaigns that aim to improve eating behaviors in Turkey.
Pomegranate Juice (PJ) and Green Tea (GT) products have increased in popularity because of their beneficial health properties. Consumers look for healthier beverages, and rely on labels, claims, and product packaging when choosing a product. The objectives of this study were to determine (1) the sensory profiles and acceptance of PJ and GT blends;(2) whether additional information would have an effect on consumer acceptance; and (3) the total phenolic content (TPC) of the samples. Six PJ and GT blends were evaluated by a descriptive panel in order to explore sensory differences in flavor characteristics. A consumer panel (n = 100) evaluated the samples before and after beneficial health information about the samples was provided to them. The blends that were higher in tea concentration were higher in Green and GT-like flavors, and lower in berry, beet, floral, sweetness, and cherry flavors. The overall liking scores of all of the samples increased after the information was provided to the consumers. The sample highest in PJ and lowest in GT blend was liked the most. In addition, as the samples increased in PJ, the TPC content increased. These results may be of interest to the beverage industry, providing information of consumer liking of beverage blends, and how information on health related claims affects consumer acceptance.
Foodborne illnesses may be related to many food production factors with home practices of consumers playing an important role in food safety. Consumer behavior for handling food leftovers has been studied, however little work on comparisons among countries has been published. The objective of this study was to investigate home food leftover practices of people from North American, South American, and European countries. Surveys were conducted with approximately 100 or more consumers in Argentina, Colombia, the United States, Estonia, Italy, Russia, and Spain. The participants responded to questions related to the length of time different types of food leftovers; such as meat, fresh salads, or restaurant dishes would be kept refrigerated or would be left at room temperature before refrigeration. Researchers also investigated how consumers would determine if the food was still safe for consumption. Potentially risky behaviors were observed in all seven countries. For instance, 55.8% of Estonians, 25% of Russians and 25.8% of Argentinean participants left food out at room temperature for several hours before storing in the refrigerator. Furthermore, 25%–29% of Colombian, Estonian, and Spanish consumers would look, smell, and taste leftovers to determine its probable safety. Correct handling of leftovers is an important aspect of consumer food safety. Although the surveys cannot be representative of all consumers in each country, they do provide an initial overview of comparative practices for handling leftovers among different countries. This provides government and educators with information on potential universal and unique consumer food safety issues related to handling leftover foods among various countries.
Background and Objectives: Extraction of proteins by alkaline extraction followed by isoelectric precipitation at three different flour: water (f:w) ratios (1:10, 1:7, and 1:5) were investigated for four pulse flours: yellow pea (YP), green lentil (GL), kabuli chickpea (CH), and navy bean (NB). Pulse flours were prepared by pre-breaking the seeds and milling into flour using a Ferkar (knife) mill with either a 0.5 mm (P1) or 1.27 mm (P2) screen. Surface properties and functionality of the protein concentrates were evaluated.Findings: Extraction yields showed no major differences between the investigated f:w ratios. Protein yields decreased significantly as the amount of water decreased. The 1:10 f:w ratio was selected to perform extractions with coarser flours (1.27 mm; P2). Results showed that flour with a smaller particle size increased yields by 0.4% to 3.2% for extraction, and 7.9%-10.3% for protein.Functional properties showed no major differences between proteins extracted at different f:w ratios, although differences were found between the different pulse types. In some cases, P2 and P1 concentrates differed in functional properties, but this was not consistent for all pulses. Conclusions: Finer flour (P1) and higher f:w ratio (1:10) resulted in higher extraction and protein yields.Significance and Novelty: This study highlights the importance of milling and control of the particle size of the flours and water use on the preparation of protein concentrates.
