This study aims to evaluate the pomological and physicochemical characteristics, antioxidant activity and phenolic profile of the three cultivars of hawthorn. A total of nine phenolic compounds were identified in C. orientalis subsp. orientalis fruits by using RP-HPLC-DAD system. These comprised of phenolic acids (i.e., gallic, chlorogenic, caffeic, syringic and p-coumaric acids) and flavonoids (i.e., catechin, epicatechin, rutin and procyanidin-B2). The major phenolic compounds in the hawthorn samples were procyanidin-B2, rutin and chlorogenic acid. The total phenolic contents of samples ranged from 2.86 to 13.81 mg gallic acid equivalent/g dry weight (DW). β-Carotene contents and antioxidant activities (DPPH and ABTS assays) of fruits were found to be high levels. In conclusion, the hawthorn cultivars used in the study differ in composition as they are subspecies of each other. It was concluded that the phenolic compounds of hawthorn are the primary substances responsible for antioxidant activity, and the fruit has shown that it has an important place with these properties. It is thought that this study will lead to the use of hawthorn in the food industry in the future, thus adding value to this fruit and enabling it to be used in new products.
Hawthorn, which grows in nature as a wild plant, is a significant fruit for human health. In this study, the characterization of the kernels' shell and inner seeds obtained from the Hekimhan district of Malatya province carried out. It was determined that the whole kernel with the shell contains 14% inner weight core, and the inner seed contains 49.40% oil by weight. It was determined that the inner core includes 5.91% moisture and 4.56% ash by weight. The protein content of the inner core was determined to be 41.25% by weight on a dry basis. When the inner core fatty acid composition examined, it was determined that the saturated fatty acids were 11.67%, the monounsaturated fatty acids were 38.92%, and the polyunsaturated fatty acids were 48.24%. ÖzSarımsak (Allium sativum L.), insan sağlığı üzerine pek çok yararlı etkisi olduğu bilinen önemli bir besindir. Kastamonu Taşköprü bölgesinde yoğun biçimde sarımsak yetiştiriciliği yapılmakta olup; bölge sarımsakları coğrafi işaret ile de tescillenmiştir. Siyah sarımsak olarak da bilinen olgunlaştırılmış sarımsak, ham ürünün belirli sıcaklık ve nem koşullarında olgunlaştırılması sonucu elde edilmiş bir üründür. Olgunlaştırma işlemi sırasında bazı önemli biyokimyasal değişiklikler meydana gelmekte ve buna bağlı olarak ürünün biyoaktivitesi de değişkenlik gösterebilmektedir. Bu çalışmada farklı polaritelere sahip çözücüler kullanılarak taze ve olgunlaştırılmış Taşköprü sarımsaklarından ekstraktlar elde edilmesi ve bu ekstraktların antimikrobiyal aktivitelerinin karşılaştırılması amaçlanmıştır. Antimikrobiyal aktivite 4 Gram (+) (Bacillus subtilis, Listeria monocytogenes, Enterococcus faecalis ve Staphylococcus aureus), 4 Gram (-) (Escherichia coli, Salmonella enteritidis, Pseudomonas aeruginosa ve Klebsiella pneumoniae) ve 2 maya (Saccharomyces cerevisiae ve Candida albicans) olmak üzere toplamda 10 mikroorganizma türü üzerinde oyuk agar difüzyon testine göre belirlenmiştir. Genel olarak, taze sarımsak ekstraktlarının antimikrobiyal aktivitesinin siyah sarımsak ekstraktlarına göre daha yüksek olduğu tespit edilmiştir. Bu duruma, siyah sarımsak üretimi sırasında uygulanan yüksek sıcaklığa bağlı bazı organosülfür bileşiklerin kaybı sebep olmuş olabilir. Her iki örneğin distile su ve metanol ekstraktlarının Gram (-) bakteriler ve mayalar üzerinde herhangi bir antimikrobiyal etkisi gözlemlenmemiştir. Kloroform ve etil asetat ekstraktlarının ise sadece Gram (+) bakterilerde değil aynı zamanda Gram (-) bakteriler ve mayalar üzerinde de oldukça yüksek antimikrobiyal aktivite gösterdiği tespit edilmiştir. Ekstraksiyon aşamasında kullanılan çözücü türünün antimikrobiyal aktivite üzerinde oldukça etkili olduğu sonucuna varılmıştır.
