The objective of this work was to develop cookies using sorghum, germinated millet and chia flours. Four formulations (F) were used: F-sorghum (100% sorghum flour); F-Sorghum + chia (50% sorghum flour and 50% chia flour), F-millet (100% millet flour) and F-millet + chia (50% millet flour and 50% chia flour). The germinated millet flour was submitted to microbiological analysis. All cookies were evaluated in relation to chemical and sensory analyses, according to AOAC and hedonic nine-point scale, respectively. The statistical analysis was performed by the variance analysis and Tukey test at 5% probability. The F-millet formulation showed the least humidity content (4.59 ± 0.25g/100g), while chia containing cookies showed lesser concentrations of carbohydrates (F-sorghum + chia: 44.35 ± 4.34g/100g and F-millet + chia: 41.03 ± 1.40g/100g) and higher ash content (F-sorghum + chia: 3.80 ± 0.02g/100g and F-millet + chia: 3.42 ± 0.24g/100g) and of protein (F-sorghum + chia: 15.38 ± 0.44 g/100g and F-millet + chia: 18.06 ± 0.53 g/100g). The caloric value and the lipids content did not differ among formulations. The sensory analysis had 57 evaluators. The cookies produced with chia and germinated millet had higher rates for flavor, texture and general impression. In general, all tested biscuits had good sensory acceptance and nutritional quality being an alternative to increase the consumption of bioactive compounds and antioxidants.
A macaúba (Acrocomia aculeata) é fonte de óleos e farinhas da polpa e amêndoa. Porém, a farinha parcialmente desengordurada da amêndoa (FPDAM), rica em proteína e fibra alimentar é subutilizada por falta de conhecimento desta composição nutricional. O objetivo deste estudo foi avaliar a qualidade proteica in vivo da FPDAM e seu efeito na saúde intestinal de ratos Wistar, além de verificar a aplicação da macaúba na elaboração de granola sem adição de açúcar. Os animais foram divididos em quatro grupos: aproteico, controle, mistura de 30% da FPDAM com 70% de caseína (M30) e mistura de 50% da FPDAM com 50% de caseína (M50). Foi avaliado coeficiente de eficiência proteica (PER), razão proteica liquida (NPR), digestibilidade verdadeira (DV), saúde intestinal e variáveis bioquímicas. Foi determinado expressão gênica de proteínas, umidade, pH, consistência e cor das fezes, quantificação de ácidos graxos de cadeia curta e análise histomosfométiras das criptas e camadas musculares do colón. Foi avaliado colesterol total, colesterol de lipoproteína de alta, baixa e muito baixa densidade, triacilglicerídeos (TGL), ácido úrico, aspartato aminotransferase (AST) e alanina aminotransferase (ALT). Os dados foram submetidos à ANOVA e teste pos hoc de Newman- Keuls (p<0,05). As dietas M30 e M50 foram bem consumidas pelos animais. Os valores de PER (2,82; 2,64; 2,99 g), NPR (3,28; 3,10; 3,45 g) e digestibilidade verdadeira (91,2; 91,1; 95,3%) apresentaram diferenças significativas entre os grupos M30, M50 e controle, respectivamente. Os grupos M30 e M50, apresentaram maior umidade fecal e menor pH fecal em comparação com o controle. Esse apresentou menor produção de ácido acético e ácido propiônico em relação aos grupos M30 e M50. A produção de ácido butírico, bem como a consistência e cor das fezes foram semelhantes entre os grupos experimentais. A profundidade das criptas, largura longitudinal da camada mucosa e largura da camada mucosa circular não diferiram entre os grupos. No entanto, a espessura das criptas foi maior no grupo M50 em comparação com os grupos M30 e controle. A expressão gênica de aminopeptidase (AP) e proteína 1 de transporte de sódio-glicose (SGLT1) não diferiu (p>0,05) entre os grupos M30 e M50 e controle. A expressão do gene transportador de peptídeo (PepT1) não diferiu (p>0,05) entre os grupos M30 e GC, mas observou-se que o grupo M50 apresentou a menor (p<0,05) expressão desse gene. A expressão do gene SI não diferiu (p>0,05) entre os grupos M30 e M50 que apresentaram valores inferiores ao grupo controle. A granola desenvolvida com a amêndoa de macaúba mostrou-se com bom aporte energético, baixa atividade de água, boa fonte de proteínas e fibras alimentares e na avaliação sensorial obteve 100% de aceitação. Conclui-se que a FPDAM pode representar uma fonte sustentável e promissora de proteínas e fibras alimentares para ser associada à dieta humana, além de fornecer compostos que atuaram favoravelmente na saúde intestinal dos animais experimentais e pode ser um ingrediente promissor para o desenvolvimento de novos produtos.
