O café é uma das bebidas mais consumidas no mundo. Com as mudanças de hábitos de consumo, novas formas e técnicas de preparo passaram a ser utilizadas. Nesse contexto, o cold brew vem tornando-se comum, no qual é um método de extração a frio onde o pó do café fica em contato com a água geralmente entre 12 à 48 horas. Este trabalho teve como objetivo avaliar a influência do tempo de preparo e os impactos nas características físico-químicas do cold brew. Utilizou-se café orgânico (Arábica typica) onde foram adotados diferentes tratamentos relacionados ao tempo extração por infusão (12, 24, 36 e 48 h) a 18 °C, e para condição de referência foi utilizado 5 min de infusão com água à 92 °C. Posteriormente, foram realizadas as análises: sólidos solúveis totais, porcentagem de extração, extrato aquoso, açúcares redutores, proteínas, acidez total titulável, pH, cafeína e fenólicos totais. Os resultados das análises foram submetidos à análise de variância, componentes principais e de agrupamento hierárquico. Notou-se que o tempo empregado em cada condição foi determinante para caracterizar as amostras, pois ocorreu aumento significativo em quase todos parâmetros físico-químicos avaliados. Deste modo, as amostras extraídas em 12 e 24 h apresentaram resultados próximos, assim como, as bebidas preparadas em 36 e 48 h, portanto a melhor condição de tempo de infusão para preparo da bebida cold brew seria 24 h, pois observa-se que não houve excesso na extração dos componentes presentes no café.
