<p>En el presente estudio se cuantificaron y sistematizaron cuatro indicadores ambientales concernientes al quehacer diario de la Universidad Nacional de Costa Rica. Se estableció la línea baseen el año 2011 y a partir de esta se plantearon y ejecutaron medidas ambientales para alcanzar los objetivos y metas propuestas para prevenir, reducir, restaurar o compensar el impacto ambiental negativo que está ocurriendo. Específicamente, el objetivo de este estudio fue verificar el comportamiento de la demanda institucional de energía eléctrica, agua, combustible fósil y papel para el periodo 2011-2014 y así determinar si las acciones de mejora implementadas resultaron efectivas. Los datos mensuales utilizados en el análisis fueron suministrados por múltiples actores internos y externos para cada campus, recinto y estación, posteriormente se sumaron para obtener valores totales anuales; estos valores se dividieron por la población universitaria para obtener también indicadores per cápita. El principal resultado es que a nivel per cápita se continúa disminuyendo anualmente la cantidad de estos recursos consumidos en la institución. Los resultados obtenidos parecen ser un reflejo de mejoras en la implementación de políticas y acciones, que integran a la totalidad de la población universitaria –personal funcionario y estudiantes-, encaminadas hacia un desarrollo sustentable en la institución.<strong></strong></p>
El pescado y los mariscos son alimentos de los más completos por su calidad y cantidad de nutrientes; sin embargo, poco se sabe sobre la composición química de los recursos pesqueros del pacífico costarricense. Por tal razón, el objetivo del presente trabajo es determinar el potencial nutricional de las partes comestibles (fresco) de seis especies de pescados y mariscos de consumo e importancia comercial en la zona pacífica de Costa Rica. Los análisis de la composición proximal: humedad, cenizas, extracto etéreo y proteínas se determinaron según la metodología de AOAC. Los resultados indicaron que el contenido de humedad varió entre 77,13 % en barracuda (Sphyraena ensis) y 83.12% en calamar (Lolliguncula panamensis), la ceniza entre 0,84% en calamar y 1,65% en almeja de agua dulce (Anodonta luteola), el extracto etéreo entre 1,16% para el calamar y 2,24% para la almeja de agua dulce. La almeja de agua dulce presentó el menor porcentaje de proteínas (10,73%), mientras que el lenguado (Cyclopsetla querna) el mayor porcentaje (19,86%). Los resultados permiten concluir que las especies estudiadas son una buena alternativa para el consumo humano, por su bajo contenido en grasas y por el aporte proteico.
La cuantificación y medición de indicadores ambientales como la huella de carbono permite planear medidas encaminadas hacia una mejora de las condiciones que propician un impacto positivo en el entorno, disminuyendo o mitigando la cantidad de emisiones de dióxido de carbono y de otros gases que aceleran el efecto invernadero. La Universidad Nacional (UNA) pretende realizar la medición anual de este indicador, con el fin de poder implementar políticas y acciones que integren a la totalidad de la población universitaria encaminada hacia un buen desarrollo sustentable de la institución. En ese sentido, paralelo a la meta nacional planteada de C-Neutralidad, la UNA busca aportar en los esfuerzos por mitigar, minimizar o compensar el impacto ambiental, con un compromiso integral de su personal y estudiantes. El objetivo de este estudio es el de cuantificar y actualizar, en el periodo de 2012 a 2014, la huella de carbono de la UNA, para poder analizar y comparar su comportamiento en el tiempo, según los aspectos aplicables contemplados en el cálculo. Para el inventario de emisiones de gases de efecto invernadero (GEI) se aplicó la metodología avalada por el Instituto Meteorológico Nacional (IMN), utilizando los factores oficializados, indicados en el Manual de factores de emisión de gases de efecto invernadero, en su cuarta edición del 2014. Como resultado, entre los años 2012 al 2014 se obtuvo un aumento del 22% de la huella de carbono, pasando de 2.906 a 3.568 toneladas CO2 equivalente. Lo anterior debido a aumentos en varios aspectos, como la cantidad de personas en la institución, así como la contaminación emitida por los viajes aéreos. Con estos resultados se pretende identificar aumentos o disminuciones en las emisiones y establecer estrategias o medidas ambientales específicas para su reducción.
Seasonal variation in proximate composition of mussels Tagelus peruvianus (Bivalvia: Solecurtidae) from the Gulf of Nicoya, Puntarenas, Costa Rica. Marine bivalves are a very important food source for human consumption, and species that has not been of traditional use as a fishery resource are gaining interest. Seasonal variation in proximate composition, condition index and energy or caloric content of the mussel Tagelus peruvianus were studied in the Gulf of Nicoya, Puntarenas, Costa Rica. From November 2007 to October 2008, a total of 35 to 40 specimens per month were collected. The proximate composition using the AOAC methods was determined. Results showed that the condition index during December, January and May decreased, indicative of two spawning periods and one gonadal resting phase. Soft tissues were respectively characterized by protein (61.9±4.3%), carbohydrates (15.7±2.4%), ash (14.0±1.9%) and lipids (8.5±1.7%). The average caloric content was 5.0±0.1kcal/g. The results showed that the decrease in protein and fat percentage, and calories content, occurred during the spawning seasons. We suggest that T. peruvianus has an optimal nutritional value for human consumption because of the low-fat and moderate protein content. Rev. Biol. Trop. 59 (4): 1517-1523. Epub 2011 December 01.
La cuantificación y medición de la huella hídrica permite analizar y tener un control sobre la gestión ambiental de la institución, además de tomar acciones que integren la totalidad de la población universitaria, orientando todos los esfuerzos hacia un desarrollo sustentable. El objetivo de la investigación es cuantificar y calcular la huella hídrica azul institucional para el periodo 2012-2016, con el fin de analizar y comparar, así, su comportamiento en el tiempo, de acuerdo con las variables contempladas en el cálculo, consumo de agua, consumo de combustible fósil, papel y energía eléctrica (puesto que se consideran fundamentales para el desenvolvimiento y funcionalidad de actividades institucionales). Se aplicó la metodología de Hoekstra y Chapagain, expuesta en el Manual de evaluación de la huella hídrica; con los factores de huella hídrica y agua virtual, tomados de Water Footprint Network, se obtuvo la cantidad correspondiente a cada rubro. Como resultado, entre el 2012 y el 2015, se llegó a una disminución del 8 % de la huella hídrica, pasando de 966 432 m3 a 888 693 m3. Mientras tanto, en el 2016, se alcanzó un leve aumento, dando un valor total de 891 976 m3.
