Oyster mushroom (Pleurotus ostreatus) belongs to the best known wood‐destroying fungi. In the nature it grows on trunks and stumps of deciduous trees but nowadays it is also cultivated on modified lignocellulose substrates in oyster mushroom farms. It possesses a very pleasant flavour and piquant taste. As most fungi it contains up to 90% water, but owing to its protein and amino acids content, low fat content, content of B‐group vitamins and a wide spectrum of mineral substances it represents a good source of biologically valuable substances for human nutrition. The saccharidic complex of oyster mushroom is characterized by low content of digestible carbohydrates and by a relatively high content of polysaccharides which take part in formation of edible fibre. In the past mushrooms were generally regarded as less valuable foodstuffs especially for their low energetic value and high fibre content. With respect to the present knowledge their importance is coming to the foreground [1]. Although some authors report that the mineral composition of oyster mushroom is biologically highly valuable — because of its content of macroelements, but especially because of numerous microelements that began to be appreciated only recently — relatively few data are available [2–10]. This paper will contribute to enhancing information in this field.
The venison in comparison with meat from slaughter animals has finer muscle fibres, dark-till brownred colour, rush blooded. Characteristic is its piquant flavour markedly differentiated among individual game types and becoming more intensive during aging. As for venison composition, the authors [I -41 report, that it is rich in protein and essential amino acids, has low fat content and relatively high vitamins and mineral elements content. The quality and the composition of the meat are in considerable extent affected by received feed, environment, season, sex and other factors.Our work focused on examination of ash content, contents of macroelements (Na, K, Ca, Mg, P) and selected microelements (Fe, Zn, Cu, Mn) in main venison kinds -in meat from deer, moufflon, wild boar, hare, duck and pheasant with the aim to enhance knowledge on composition of these foods.
F. STRMISKA Unter den Eigenschaften der Lebensmittel fgllt ihrem Niihrwert die integrierende Bedeutung zu. Dazu ist grunds5tzlich zu bemerken, da8 diesem Begriff ein verschiedener, meist unbefriedigend definierter Inhalt zugeschrieben wird : Einmal wird der Nahwert mit dem Energiewert als identisch hingestellt [I], zum andern mit der biologisch-funktionellen U'ertigkeit in Zusammenhang gebracht [z, 31. Einen gewissen Ausweg aus diesem Dilemma stellt die Festlegung dar, daS der NShrwert durch die das Lebensmittel konstituierenden Bausteine insgesamt reprhntiert wird, als durch Art und Menge an EiweiB, Lipiden und Kohlenhydraten und daD auch die Anwesenheit der Wirkstoffe (Vitamine, Mineralstoffe) zu berilcksichtigen ist [4, 51 ; dieser Konzeption tragt auch die Mehrheit der Lebensmittel-Tabellen Rechnung [6-91. Abgesehen von Bemerkungen, daD man bei der Bewertung von Lebensmitteln zusatzlich ihre Ausnutzbarkeit [2] bzw. weitere Faktoren beranziehen mu8, liegen in der Fachliterat u r Angaben vor, die erstreben, den Nithrwert mittels definierten Kennzahlen auszudriicken; es seierinnert an Arbeiten von PIRQUET [ro], LUTZ [11], HARTLEBEN [IZ], M~~HLSCHLEGEL [13j, HRUIBA und &RHA [q], H R U B~ [15], RANNAK [16] und KOHMAN [17]. Das Hauptziel diesrr Darlegungen besteht in dem Bemiihen, die vielfaltigen, zuengst miteinander verkniipften Befunde der Emahrungs-und Lebensmittellehre auf eine gemeinsame, wissenschaftlich begriindete Basis zu bringen und damit der Produktion, Verarbeitung, 1-agerung usw. der Lebensmittel gesicherte Richtlinien vermitteln zu kijnnen.GemaB den zitierten Arbeiten [IO-171 miissen in den Begriff ,,Nahrwert" eines Lebensmittels eingehen die Emiihrungsbedarfsnormen, der Gehalt an Nahr-und Wirkstoffen nach Art und Menge, die Ausnutzbarkeit sowie evtl. weitere Faktoren. Gelingt es, diese Vielheit zu einer Einheit zu verschmelzen, dann steht zu erwarten, daS man dem ,,Kahrwert" einen wescntlich erweiterten und den ernahrungsphysiologischen Erfordernissen Rechnung tragenden lnhalt zuerteilen kann. I . Allgemeine Formulation des NahrweytesJedes Lebensmittel bzw. jede Mahlzeit oder Nahrung bestehen aus einer Keihe die Ernahrung sichernden Komponenten (y). Unter der Voraussetzung, daB das arithmetische Mittel aus dieser Vielzahl den ,,Nahrwert" (NW) darstellt, kann man folgende mathematische Beziehung formulieren Nach dieser Gkichung I steigt der Nahwert mit der Zahl und der Menge der vorhandenen Komponenten an.
