The aim of the study was to evaluate the effect of MAP and film thickness on Agaricus bisporus quality. Three initial gas compositions: high oxygen packaging (100% of O2); medium oxygen packaging (50% O2, 50% N2); low oxygen packaging (5% O2, 5% CO2, 90% N2) and two types of polyethylene films of 54 and 39 µm thickness were used. The samples were stored at 4 ± 1C for 14 days. The films and MAP had a significant effect on color and weight loss of the mushrooms. In the case of texture, the gas composition alone exerts a significant effect. The optimal conditions for prolonging the shelf life of mushrooms were found for packaging with medium oxygen level and film of higher permeability. In optimal conditions, mushrooms were characterized by lightness of 93 and 85, and a browning index of 11 and 23 in 0 and 14 days of storage, respectively. Practical Application White button mushrooms are highly perishable. The average storage time of fresh mushrooms does not exceed 4 days. There is a pressing need for effective methods to extend the shelf life of these mushrooms. According to the presented results, it is possible to maintain the product visually acceptable up to 14 days for mushrooms packed with the usage of a 39 µm thick film type and modified atmosphere with a medium level of oxygen (50%).

The aim of the present study was to determine the influence of age of animal, hot carcass weight, pH, conformation and fat class on basic beef quality attributes (tenderness, sarcomere length, basic chemical composition, marbling and colour) in a group of purebred animals. The object of the study was beef of Limousin bulls (25 to 27 months, hot carcass weight - 432±31 kg, “U” conformation class, “2”–“3” fat class). Analysed cuts were Infraspinatus muscle from the blade and Longissimus dorsi muscle from the cube roll and the striploin. Tenderness was analysed with universal testing machine, colour - chromometer analysis, sarcomere length - microscopic method, basic chemical composition - near-infrared spectroscopy and marbling - computer image analysis. No differences in tenderness and sarcomere length were observed within the age groups of Limousin bulls (age of 25, 26, 27 months) (p>0.05). Moisture (p = 0.0123) and fat (p = 0.0250) content were significantly different for meat of animals slaughtered at the age of 25 and 27 months. No influence of pH value on tenderness was observed, but at the same time, influence on sarcomere length (p = 0.039) and b* component of colour (0.045) was found. For “U” conformation class, in subclasses, as well as for fat classes “2”–“3”, there were no differences in tenderness, sarcomere length and colour components. Higher fat content was observed in the higher fat class, rather than in lower, however this feature was not associated with marbling.

The aim of this study was to determine the effects of pig fodder supplementation on lipid oxidation of Longissimus dorsi (L. dorsi) after frozen storage at-20 °C ± 1 °C for nine months. Fodder additives included 3% linseed oil (L1) or 3% linseed oil and antioxidants containing 100 mg vitamin E/kg and 1 mg organic selenium/kg (L2). The oxidation processes were evaluated by measuring thiobarbituric acid reactive substances (TBARS) and analyses of a profile of volatile organic compounds (VOC). The VOC were determined using an electronic nose based on ultra-fast gas chromatography. The level of TBARS for diets was 1.88 ± 0.52 to 2.30 ± 1.10 mg malondialdehyde/kg of meat. The results indicated that the diet of pigs from L1 and L2 groups had no impact on the TBARS value of L. dorsi pork frozen for nine months. On the other hand, aldehydes, which are regarded as compounds characteristic of oxidation processes, were identified in all samples. Volatile aldehydes contributed approximately 10%, 12%, and 15% of total detected volatiles for L2, L1, and the control group, respectively. Moreover, the data showed that propanal and benzeneacetaldehyde were at the same level, regardless of the animal's diet, which is in accordance with the TBARS level. These volatile aldehydes resulted from the oxidation of polyunsaturated fatty acids (PUFAs) and may be considered indicators of lipid oxidation for meat enriched with PUFAs. The results show that supplementation of the pigs' diet with linseed oil (L1 group), which is a source of PUFAs, is recommended for meat intended for long-term freezing storage. However, supplementation with antioxidants is unnecessary, because it has no effect on lipid oxidation of L. dorsi pork after long-term freezing storage.

The aim of the study was to determine the effect of the addition of different levels of Nigella sativa L. oil to minced pork on the quality and shelf life of pork patties. During the studies lipid oxidation, fatty acids profile, color as well as a total number of aerobic bacteria of raw pork patties stored under refrigeration conditions in the period of 8 days were determinated. Furthermore, sensory evaluation of roasted patties were performed. Results showed that the addition of Nigella sativa L. oil to pork has an impact on the properties of patties. The radical scavering activity of Nigella sativa L. oil was also indicated. It can be concluded that there is the potential of using Nigella sativa L. oil in the development of functional pork products with favorable volatile compounds and beneficial for people fatty acids profile. Practical applications Synthetic antioxidants have been used to prevent lipid oxidation in meat. However, the addition of synthetic antioxidants to food products has been restricted because of possible of health risks and toxicity. Therefore, there is an increasing interest in the addition of natural antioxidants to prevent oxidative processes in meat products. The study presents the effect of Nigella sativa L. on quality changes of pork patties under refrigerated conditions. The work has shown the positive effect of Nigella sativa L. oil on fatty acids profile in raw pork patties and volatile compounds profile in roasted pork patties. Samples with the addition of oil characterized up to 60% slower oxidative process of lipids than control samples; simultaneously without a negative changes of sensory properties.
