A carne suína possui reconhecido valor nutricional e sensorial, sendo, por isso, a espécie de carne mais consumida no mundo e a mais utilizada para a fabricação de derivados. Contudo, o consumo de carne suína no Brasil é menor que o de carne bovina e de frango, e há pouco conhecimento da população sobre suas características de qualidade. Este trabalho teve como objetivo avaliar o perfil de consumo e a percepção de atributos de qualidade das principais espécies de carne consumidas no País por estudantes da cidade de Irati, PR, com enfoque para a carne suína. A pesquisa foi realizada com 470 alunos do ensino médio de duas escolas públicas e duas escolas privadas de Irati. A avaliação foi realizada mediante formulário de 18 questões relativas à frequência, forma de consumo, preferência, razão para consumo e percepção de saúde, risco de transmissão de enfermidades e do bem-estar animal para as carnes bovina, suína e de frango. A carne bovina mostrou-se a preferida e a mais consumida pelos estudantes. A carne suína foi preferida por 33% dos estudantes e apontada como a menos saudável (83%), de maior risco de transmissão de enfermidades (80%) e de menor bem estar animal na produção (60%). O sabor foi o principal motivo e a forma in natura a mais frequente para o consumo de carnes. O consumo de carne suína pelos estudantes mostrou-se limitado, sendo importante o emprego de estratégias que desmistifiquem sua qualidade, especialmente aos jovens, que irão constituir o perfil do futuro consumidor de carnes no País.
The shelf life extending effect of different modified atmospheres packages (MAP): vacuum (MAP-1), 69.6% N 2 + 30% CD 2 + 0.4% CD (MAP-2) and 70% D 2 + 30% CD 2 (MAP-3) on lamb meat at two slaughter ages (4 and 8-month-old) was assessed. pH decreased as slaughter age (SA) increased, and increased during longer storage time (ST), with no MAP effects. Lamb meat stored in MAP-1 and MAP-3 showed greater drip loss than that stored in MAP-2. Shear force was not influenced by SA and MAP treatments, but decreased during ST. Meat from 8-month-old lambs packaged in MAP-3 at longer ST resulted in lipid oxidation increase. MAP-2 enhanced color saturation and lamb meat redness, whereas MAP-3 showed lowest redness and chroma values, and highest aerobic psychrotropic count. Meat from 4-month-old lamb stored in MAP-3 presented shortest shelf life based on psychrotropic bacteria growth. The association of higher SA with high D 2 MAP proved to compromise oxidative stability of lamb meat, adversely affecting its shelf life. Vacuum and CD packaging showed similar effects on lamb meat preservation; however, CD had advantage in maintaining fresh red color of meat.
O objetivo deste trabalho foi avaliar comparativamente a ocorrência de bactérias patogênicas e indicadoras e a resistência antimicrobiana de enterobactérias isoladas de carcaças de frango orgânico e de frango convencional. Foram avaliadas 50 carcaças de frango congeladas, 25 de criação orgânica e 25 convencionais de cinco marcas comerciais adquiridas no Sul e Sudeste do Brasil. Foram realizadas contagens de mesófilos, psicrotróficos, coliformes totais, Escherichia coli, Staphylococcus coagulase positiva e pesquisa de Salmonella sp. A resistência antimicrobiana foi avaliada pelo método de disco-difusão. Os resultados foram analisados por Anova e teste de Tukey para detectar diferenças entre as marcas dentro de cada grupo (orgânico e convencional) e pelo teste de Kolmogorov-Smirnov para detectar diferença entre os grupos orgânico x convencional. As diferenças entre a resistência antimicrobiana nos grupos foram calculadas pelo teste do Qui-quadrado (P<0,05). As carcaças orgânicas apresentaram maior contaminação microbiana em comparação às carcaças convencionais, contudo as enterobactérias isoladas do grupo orgânico mostraram menor resistência antimicrobiana. Tetraciclina foi o antibiótico com a maior frequência de resistência em ambos os sistemas de criação. O uso restrito ou ausente de antibióticos na produção orgânica pode contribuir para o menor risco de transmissão de bactérias antibióticoresistentes pelo consumo de carne de frango.
O objetivo deste trabalho foi avaliar as características físico-químicas e nutricionais de carne de frango orgânico disponível no comércio varejista. Foram analisadas 25 carcaças de frango orgânico e 25 de frango convencional, sendo de cinco marcas diferentes em cada grupo. Foram realizadas as determinações de pH, cor instrumental, drip test, composição centesimal, perda de peso pelo cozimento, força de cisalhamento, teor de colesterol e perfi l de ácidos graxos. A comparação dos resultados entre as diferentes marcas dentro de cada sistema de criação foi realizada por ANOVA e teste de Tukey (p < 0,05). A comparação dos resultados entre o grupo orgânico e o convencional foi realizada pelo teste t (p < 0,05). Para a maioria dos parâmetros analisados, as carnes de ambos os sistemas de criação mostraram-se semelhantes. Houve diferença para pH, perda de peso pelo cozimento, teor de gordura, colesterol, cinzas e cor instrumental (p < 0,05). A carne orgânica obteve maior rendimento durante o cozimento e maior valor de a* (cor vermelha) tanto na forma crua quanto após cozimento. A carne orgânica apresentou maior teor de gordura (p < 0,05), porém ainda é considerada magra, visto que o teor foi inferior a 1% e apresentou menor teor de colesterol (p < 0,05). Na comparação de marcas comerciais, verifi cou-se maior variação de resultados (p < 0,05) entre as marcas de frango orgânico, mostrando menor uniformidade nos atributos de qualidade físico-química entre as carcaças produzidas nesse sistema, o que pode difi cultar seu reconhecimento como um produto de segmento específi co de mercado pelo consumidor no país.
