ABSTRACT-Pineapple is widely consumed and appreciated not only due to its taste and aroma, and also to its nutritional, functional and antioxidant properties, including its vitamin C and carotenoid contents. Brazil is one of the largest world' pineapple producer, and Pérola and Smooth Cayenne cultivars are the most commonly grown and marketed, but their susceptibility to fusariosis can compromise cultivation. New cultivars resistant to this pathogen are available to meet the demands of pineapple producers and consumers. The aim of this study was to evaluate the content of bioactive compounds and antioxidant activity of pineapple fruits of Imperial, Victoria, IAC Fantástico and Gomo de Mel cultivars, as well as traditional Pérola and Smooth Cayenne cultivars. Fruits grown in the Triângulo Mineiro region were evaluated by colorimetry, determination of ascorbic acid and phenolic compounds by spectrometry, antioxidant activity by ABTS and carotenoid profile by HPLC. Regarding color, Gomo de Mel cultivar showed lower brightness and higher value of parameter b*, indicating a more intense yellow color in this fruit. This result is consistent with the highest carotenoid concentration in this cultivar. Another cultivar that stood out was Imperial, which, while maintaining high carotenoid levels, also showed high concentrations of vitamin C and phenolic compounds, and higher antioxidant activity. Victoria cultivar showed low levels of bioactive compounds and antioxidant activity, even lower than IAC Fantástico cultivar, which showed levels of bioactive compounds similar to traditional Pérola and Smooth Cayenne cultivars. Index terms: Ananas comosuse, fusariosis, vitamin C, phenolics, carotenoids.
Fruits and vegetables are highly perishable foods which usually undergo a gradual loss of nutraceuticals during storage. Chitosan-based edible coatings are extensively studied thanks to antimicrobial activity and great potential to extend the shelf life. However, little information is presently available on the nutraceutical quality of chitosan-coated products. The present study is addressed to evaluate accompanied by a delayed degradation of some phenolic compounds during storage. These results indicate that chitosan coating is effective in maintaining the quality parameters, the coated fruit showed less weight loss (216%) and more firmer (140%) than control fruit, chitosan-coated tomato emitted significantly lower ethylene (241%) than control, and slowing down the nutraceutical loss occurring in postharvest, mainly of the lycopene, main carotenoid, found in tomato fruits. These results indicate that chitosan coating is effective in slowing down the nutraceutical loss occurring in postharvest, thus representing a promising tool to preserve bioprotective phytochemicals during fruit conservation. Practical applicationsDuring storage and domestic conservation, the nutraceutical quality of fruits and vegetables usually decreases and can undergo deterioration due to physiological disorders and mechanical damages. In the last decade, use of edible coatings has attracted interest as a promising technology to prolong the shelf life of particularly perishable foods. These coatings act as protective barriers decreasing transpiration rate and gas transfer across the product surface, thus promoting the maintenance of nutritional quality.
ABSTRACTThis work was carried out in a private vineyard, in Caldas-MG, during the 1999/2000 agricultural year, using 'Niagara Rosada' grafted on 'RR 101-44' established plants, aiming to anticipate grape harvest in Southern Minas Gerais, Brazil. The following treatments were evaluated: anticipated pruning with plastic cover, with or without irrigation; anticipated and regular pruning. Cycle length, degrees-day accumulation from pruning to ripening, morphological characteristics (transversal and longitudinal diameters, weight and number of bunches per plant) and chemical characteristics (soluble solids level, pH and acidity) were evaluated. Despite the higher degree-day accumulation, the plastic cover did not promote a reduction in the vegetative cycle and reduced the production. The anticipated pruning without plastic cover allowed precocity of 42 days in the harvest without any increase in the costs. Plants submitted to regular pruning, without any cover, presented higher number and weight of bunches, higher diameter and soluble solids level. There were no significant differences among the treatments with regard to pH and acidity of the fruits.
