In this study, it was aimed to determine the reasons for the waste of bread among consumers in Hatay province and what should be taken for the elimination of these causes. The subjects of this study were the data obtained from 406 consumers selected from the city center. The data were obtained through face to face interviews during the period of May-2017. In the questionnaire, there were questions towards determining the bread consumption habits, consumption preferences and bread waste levels along with the socio-demographic characteristics of the consumers. Cross tabulation and chi-square analysis were used in the evaluation and comparison of the data. It was determined that the amount of bread consumed per person was 278 g/day and 7% of the total family consumption of bread was wasted without any consumption. While the most consumed types of bread are traditional white bread and flatbread, bakeries and groceries are the most common places to buy bread. Consumers usually buy bread twice a day and the main considerations in the consumers’ preference for bread purchase are that the establishments comply with hygiene requirements and that quality materials are used in the bread making process. Staling and bad taste are among the significant issues in bread wastage. Taking future trends in the sector into consideration, producers should pay attention to product quality, production according to health conditions and longer shelf life on bread; depending on consumer awareness. The producers should diversify their production of bread and other bakery products.
Amaç: Bu çalışmada, Hatay ili Payas ilçesinde sığır yetiştiriciliği yapan ve Damızlık Sığır Yetiştiricileri Birliğine üye olmayan işletmelerde ürün pazarlama yapılarının ortaya konması amaçlanmıştır. Araştırmada, işletmecilerin pazarlama sorunları belirlenmiş ve çözüm önerileri sunulmuştur.Yöntem ve Bulgular: Araştırmanın ana materyalini ilçede faaliyet gösteren 63 adet işletmeci ile yüz yüze yapılan anket çalışması sonucunda elde edilen birincil veriler oluşturmuştur. Örnek büyüklüğü basit tesadüfi örnekleme yöntemi kullanılarak belirlenmiştir.Genel Yorum: İşletmecilerin %61.9’unun yaşı, 25-50 yaş arasındadır. İşletmeciler ortalama 16.7 yıldır sığır yetiştiriciliği yapmaktadır. İşletmelerde ailedeki fert sayısı ortalama 4.4 kişidir. İşletmecilerin %3.2’si üniversite mezunudur. İşletmelerde yıllık pazarlanan çiğ süt geliri ortalama 623.250 TL’dir. İşletmelerde aylık üretilen sütün %77.0’si çiğ olarak pazarlanırken, %8.9’u tereyağı ve peynire işlenerek pazarlanmaktadır. Süt satışları doğrudan tüketiciye (%73.0), toplayıcılara ve mandıralara (%27.0) yapılmaktadır. İşletmecilerin %74.6’sı süt fiyatlarını düşük olduğunu ifade etmiştir. İşletmeler süt ve süt ürünlerinin yanı sıra canlı hayvan satışı da yapmaktadır. İşletmecilerin %90.2’si kasaplara satış yaparken, %9.8’i tüccarlara satış yapmaktadır. İşletmeciler pazarlama kooperatiflerinin ve birliklerinin kendilerine özellikle fiyat oluşumunda (%58.7), pazarlama konusunda alternatif pazarlar ve pazarlama kanalları bulma (%34.9), işletmecileri bilgilendirme ve bilinçlendirme açısından faydalı olacağını belirtmişlerdir (%6.3). Çalışmanın Önemi ve Etkisi: Bu çalışma ile ilçede pazarlama kooperatifinin bulunmadığı, kurulacak bir kooperatifin ürün pazarlanmasında yeni bir alternatif olacağı, ürün fiyatlarının düzenli ve dengeli olarak artacağı, üretici bilinç düzeyinin artacağı, pazar bilgilerine daha kolay erişilebileceği belirlenmiştir. İşletmelerde hayvansal ürünlerin pazarlanmasında yaşanan en önemli sorunlar; desteklemelerin yeterli olmayışı, nakit yetersizliği, müşteri sayısının azlığı ve pazar bilgilerine erişim konusunda yetersizliktir. Çalışma ile İşletmelere sorunların çözümü için öneriler sunulmuştur.
In this study consumers’ perception of, and purchase intention for genetically modified foods were examined in the city center of Hatay. The data of the 343 surveys were collected by using the face to face interview method. The data were analyzed by means of Likert Scale, and Spearman Correlation Analysis. According to the survey results, consumers’ risk perceptions about genetically modified foods are quite high. Consumers don’t willingly purchase genetically modified foods, and they intend to consume foods grown in traditional methods. High risk perceptions have a determining role on consumers’ views about genetically modified foods and their purchase intention for them. Another outcome from this study is that consumers’ awareness and knowledge levels about genetically modified foods are quite low, and that their perceptions and attitudes are mostly based on biases.
This research was completed in 2014, in an attempt to determine the problems and solutions of the irrigation unions and their members who operate in the city of Hatay. The research involves 6 out of 8 irrigation unions located in Hatay. The data was gathered by face to face surveys conducted with 6 union managers and 173 union members. Logistics Regression analysis, which is a multivariate analysis technic was used in the analysis of the variables. It was concluded that 65% of the producers are satisfied, and 35% of them are unsatisfied with the irrigation union. The estimate parameters revealed that the irrigation price at low and normal level were the most effective variables. In accordance with the data, evaluated for the managerial staff in the permanent status, showed that the lack of the efficient and subject expert personnel is one of the most important issues directly interfering with the provided service. The delays occurring in the collection of the price of the irrigation water disrupts the maintenance services needed while operating the facilities. The unions need public assistance to cover the personnel expenses, large maintenance processes, and development of the facilities.
The relationship between an individual's actual knowledge and their self assessed knowledge about an issue is an important factor on consumer's behaviour. The effect of the knowledge factor on consumer decision making is evaluated by two approaches which are objective (real knowledge) and subjective (self assessed) knowledge. In certain studies it was found that in some situations consumers believe they know more than they actually do about a topic; and they may make their decisions based upon the knowledge they assume is correct, whether it is true or not. This study aimed at determining the relationship between the objective and subjective knowledge about GM foods of consumers who live in the Hatay city centre. According to the research results; even though around 70% of the consumers thought that their knowledge about GM foods were ''enough, or relatively enough'', correct response ratios of the four questions that were based on specific knowledge were quite low. In other words, consumers were overconfident about their knowledge of GM foods. Also, there was no correlation found between consumer's purchase intention and knowledge level. Bilgi faktörünün karar verme davranışı üzerine etkisi objektif (gerçek) ve sübjektif (kişisel değerlendirme) olmak üzere iki yaklaşımla ölçülmektedir. Bugüne kadar yapılan pek çok araştırmada, tüketicilerin belirli konu hakkında kendilerini olduklarından daha bilgili gördükleri ve bireysel olarak doğru olduğuna inanılan bu bilgi doğrultusunda karar verdikleri ortaya konulmuştur. Bu çalışmada, Hatay ili Antakya ilçe merkezinde yaşayan tüketicilerin, genetiği değiştirilmiş ürünler hakkındaki objektif ve sübjektif bilgileri arasındaki ilişki ortaya konulmaya çalışılmıştır. Araştırma sonuçlarına göre; tüketicilerin yaklaşık %70'i kendilerini genetiği değiştirilmiş ürünler hakkında ''kısmen veya yeterli bilgiye sahip'' olarak değerlendirirken, objektif bilgilerini ölçemeye yönelik sorulan 4 soruya doğru cevap verme oranı oldukça düşük kalmıştır. Başka bir deyişle, araştırmada tüketicilerin GD ürünler hakkında kendilerini olduklarından daha bilgili buldukları sonucuna ulaşılmıştır. Ayrıca araştırmada, tüketicilerin genetiği değiştirilmiş ürünler hakkındaki objektif ve sübjektif bilgileri ile satın alma niyetleri arasında anlamlı bir ilişki olmadığı sonucuna ulaşılmıştır.
