VonElse Noekmann.~berblickt man die in den letzten Jahren zum l~achweise einer Verf/ilschung des Butterfettes durch Palmfette empfohlenen Verfahren, so ergibt sich, da_6 kaum eines derselben kritischer Nachpriifung standgehalten hat. Es ist dies auch erkl/irlich, weil das Butterfett als willkiirlich durch die Ern~hrung des Milchviehs zu beeinflussendes l~aturerzeugnis eine sehr verschiedene Zusammensetzung zeigen kann, die unter Umst~nden eine Verf/ilschung dureh Fremdfett vorzut/~usehen vermag. Gleichsinnig in den Ver/inderungen der analyfischen Konstanten elnes mit Palmfetten ge-f~Ischten Butterfettes ~iuBert sich der Einflul~ der Riibenblattfiitterung, wie solche im I-]erbst zur Zeit der Zuekerriibenernte in vielen Gegenden des Reiches die Regel bildet. Mit urn so grSl~erer Vorsieht sind deshalb die Folgerungen zu bewerten, die aus Zahlen gezogen werden, welche mit irgend welchen Verfahren an mit Palmfetten versetzten Butterproben im Laboratorium gewonnen wurden. Schon h~ufiger ist angeregt worden, vor Aufstelhng yon endgiiltigen Grenzzahlen auf den Tierversuch zuriickzugreifen, und diese Ansicht ist besonders yon H. L ii h r i g wiederholt zum Ausdruck gebracht worden, allerdings ohne dab dessen Einw/~nde die gebfihrende Berfieksichtigung gefundeu h~itten.l~achdem zum Teil durch die einschl/igigen Arbeiten im hieslgen Amte festgestellt war, dal~ die Rfibenblattfiitterung im t{erbste eine typische VerKnderung des Butterfettes zur Folge hat, muBte yon vornherein damit gerechnet werden, da/~ das yon E. E we r s angegebene Verfahren zum :Naehweise yon Palmfetten in Butter unter Umstanden versagen wfirde. Diese Voraussage hat dureh die naehstehenden Untersuchungen in gewissem Grade ihre Best~itigung erfahren.Da unseres Wissens eine kritische Nachprfifung d[eses Verfahrens bisher nicht erfolgt ist, babe ieh ersteres auf Veranlassung des Direktors Dr. L ii h rig, entspreehend der Ubung, vor ~bernahme eines neuen Verfahrens in den Bestand der analytisehen Methoden des Amtes, dasselbe erst einer systematisehen Priifung zu unterziehen, eingehend nachgeprfift and zwar sowohl an :ButterfetCen, wie sic im Wege der amtlichen ~Nahrungsmittelkontrolle hier eingeliefert wurden, als auch an solchem Material, welches aus der 1)eriode der Rtibenblattffitterung des letzten Herbstes stammte. Wie in den fl.iiheren Jahren verdankten wir dieses dem Direktor der hiesigen Genossenschaftsmolkerei. Um die Reinheit des Butterfettes garantieren zu k6nnen, is~ dasselbe aus Sahne im Lab0ratorium selbst ausgebuttert worden.
