OBJETIVO:O propósito deste estudo foi quantificar e avaliar o custo da sobra limpa em oito unidades de alimentação e nutrição de uma empresa siderúrgica de grande porte. MÉTODOS: Foram avaliadas oito unidades de alimentação e nutrição durante cinco meses. A quantificação da sobra limpa considerou as sobras e o número de refeições planejadas e servidas diariamente. As preparações foram divididas em grupos, sendo os custos obtidos a partir do valor médio dos alimentos adquiridos no mês. RESULTADOS: Cinquenta por cento das unidades de alimentação e nutrição não atingiram valores inferiores ou iguais a 30g, meta per capita de sobra limpa determinada pela empresa. Os per capitas totais de sobra limpa variaram entre 24g e 60g, equivalentes a 176kg-1.213kg de alimentos desperdiçados mensalmente. As saladas apresentaram as maiores porcentagens de desperdício na maioria das unidades. O custo mensal com as sobras atingiu de 2,2% a 3% do valor gasto mensalmente com alimentos, representando um custo elevado para a empresa (entre 80 a 108 salários-mínimos). Diante dos resultados obtidos, foram propostas medidas de intervenção, tais como planejamento e elaboração adequada das preparações, caracterização dos clientes e ações para educação nutricional. CONCLUSÃO: As unidades de alimentação e nutrição apresentaram considerável perda de alimentos com a sobra limpa. A implementação das intervenções propostas poderá minimizar essa perda. O valor gasto com esse desperdício poderia ser revertido em melhorias nos processos produtivos.

Analysis was carried out by HPLC, using gradient of elution and fluorescence detection. Limits of quantification were 2 ng/mL; 2 ng/mL and 28 ng/mL for tetrahydrofolate (THF), 5-methyltetrahydrofolate (5-MTHF) and 5-formyltetrahydrofolate (5-FTHF), respectively. Recovery rates of THF, 5-MTHF and 5-FTHF varied from 87.86 to 100.64%; 88.12-94.22% and 89.82-106.69%, respectively. Test of repeatability showed relative standard deviation for peak areas lower than 10%. Tests for linearity showed high coefficients of determination. The results showed advances in folates extraction and analysis in raw and cooked leafy vegetables.
Resumo -O objetivo deste trabalho foi determinar a composição química, estimar o conteúdo de compostos fenólicos solúveis totais e de fitatos, e avaliar a capacidade antioxidante de grãos integrais de gergelim (Sesamum indicum) creme e preto. Amostras de ambos os tipos de grão foram submetidas a tratamento térmico em estufa de circulação de ar a 150°C por 10 min e trituradas até granulometria de 20 mesh. O gergelim creme apresentou maior teor de lipídios, carboidratos, fibra alimentar solúvel e valor calórico, enquanto o gergelim preto apresentou maior teor de fibras alimentares insolúvel e total. O gergelim preto apresentou teor de compostos fenólicos solúveis totais de 261,9±7,5 mg em equivalente de ácido gálico (EAG) por 100 g de farinha, aproximadamente duas vezes superior ao do gergelim creme (147,5±31,7 mg por 100 g de EAG). O teor de fitatos do gergelim creme foi duas vezes inferior ao do gergelim preto (0,66±0,06 e 1,36±0,04 g por 100 g de ácido fítico, respectivamente). O gergelim preto apresenta maior potencial funcional relacionado à atividade antioxidante. Antioxidant capacity and chemical composition of whole grains of cream and black sesameAbstract -The objective of this work was to determine the chemical composition, to estimate the contents of phenolic compounds and phytate, and to evaluate the antioxidant capacity of whole grains of cream and black sesame (Sesamum indicum). Seed samples from both grain types were subjected to a heat treatment in an oven with forced air circulation at 150°C for 10 min, and milled to 20-mesh particle size. Cream sesame showed higher content of lipids, carbohydrates, soluble dietary fiber, and calories, while black sesame had higher content of insoluble and total dietary fibers. Black sesame had total soluble phenolic content of 261.9±7.5 mg of gallic acid equivalent (GAE) per 100 g of flour, which was approximately two times higher than the value observed for cream sesame (147.5±31.7 mg per 100 g of GAE). Phytate content in cream sesame was two times lower than in black sesame (0.66±0.06 and 1.36±0.04 g per 100 g of phytic acid, respectively). Black sesame has the highest functional potential related to antioxidant activity. However, both sesame grains can be considered sources of natural antioxidant compounds.
