Shiga toxin-producing Escherichia coli (STEC) is a group of emerging pathogens that can cause human diseases, including hemolytic uremic syndrome (HUS) and hemorrhagic colitis (HC). Monitoring slaughtering stages and checking contamination points are crucial for the production of safe food. In this context, the aim of this study was to verify contamination by STEC strains, to determine the contamination points and evaluate the resistance profile to 12 antimicrobials used in both veterinary and human medicine. A total of 80 samples were obtained from eight collection points (pen floor, rectum, hide, carcass swabs and esophagus, diaphragm, masseter, and retail beef tissue samples). The isolates were collected by dilution plating on MacConkey agar with sorbitol, cefixime, and tellurite and analyzed by multiplex polymerase chain reaction for virulence genes. Serotyping of non-O157 was performed, and testing for 12 antibiotics by disk diffusion was carried out. A total of 18 STEC strains were isolated, presenting different virulence profiles. Contamination by STEC was observed in the rectum (5/18), carcass surface (5/18), hide (3/18), diaphragm (2/18), retail beef (2/18), and masseter muscle (1/18). Pen floor swabs and esophagus tissues showed no STEC contamination. Moreover, three strains were identified as O26 and three as O113:H21 strains, which have been linked to HUS and HC outbreak cases in Brazil. All STEC isolates were susceptible to all evaluated antimicrobials, except streptomycin. The presence of STEC strains is a direct risk to the consumer, especially when isolated from retail beef, and contamination can occur during different slaughter stages. However, antimicrobial resistance profiles did not identify multidrug-resistant strains, limiting potential antimicrobial resistance transmission to other pathogens.

Enterobacteriaceae, coliforms, and Escherichia coli counts are important hygiene indicators and may be pathogenic. Thus, the aim of the present study was to determine microbiological contamination in head meat, the esophagus, diaphragm, and boning scraps and evaluate the hygienic conditions of the processing of these products. The Petrifilm5 (3M) method for determining Enterobacteriaceae, total coliforms, and E. coli was applied for 104 samples. APHA, European Union, PAHO/WHO, and Brazil/MAPA recommendations were followed. Bleeding and skinning knives were contaminated with E. coli (61.5%). Regarding the meat cuts, 30.76% samples from head meat, the esophagus and the boning flap showed the presence of E. coli in counts up to 2 log CFU/g, while 15.3% of the diaphragm samples showed up to 1.85 log CFU/g. The analyzed comminuted meat was, therefore, shown to be contaminated with E. coli during processing, indicating that end-products from this raw material can offer biological risks.

ResumoINTRODUÇÃO: As barras de cereais são feitas a partir da compactação de frutas desidratadas e de cereais como a aveia, o trigo, a soja, o milho e o arroz. A popularidade no mercado deve-se a sua praticidade, aos seus valores nutricionais e ao seu sabor. O grão da soja vem sendo considerado, por ser uma importante fonte proteica rica em substâncias como isoflavonas, fibras e esteróis que possuem propriedades funcionais. Essas substâncias previnem de doenças degenerativas como câncer, osteoporose, diabetes, doenças cardiovasculares e menopausa. Este trabalho objetivou elaborar uma barra de cereais contendo soja, com características nutricionais que atendam a necessidade de praticantes de atividades físicas e publico em geral. METODOLOGIA: Os ingredientes foram adquiridos no comércio local da cidade de Cuiabá -MT e elaboração da barra de cereal foi realizada no laboratório de Técnica Dietética da UFMT. Foram utilizadas duas formulações e apresentadas á um grupo de provadores não treinados com o objetivo de verificar a aceitabilidade da melhor formulação. Para averiguar alterações organolépticas do produto, amostras da formulação escolhida foram armazenas em duplicata, sendo uma em temperatura ambiente e outra em estufa à 40°C durante sete dias.
