4,5 Faculdade de Tecnologia CENTEC-FATEC-Cariri-Brasil Resumo O objetivo do estudo foi avaliar a qualidade higiênico-sanitária e microbiológica de sucos in natura sabores manga, acerola, goiaba e caju comercializados por vendedores ambulantes nas vias públicas da cidade de Juazeiro do Norte-CE. No segundo semestre de 2008, foram coletadas doze amostras de sucos. As coletas foram efetuadas em períodos regulares de sete dias, durante vinte e um dias. As análises microbiológicas consistiram na investigação da presença de Salmonella spp. e número mais provável de coliformes totais e fecais, segundo metodologias descritas por American Public Health Association (1976). Verificou-se contaminação por bactérias do grupo coliformes a 35 °C em três amostras (25%). Para coliformes a 45 °C evidenciou-se contaminação em duas amostras (16,66%), estando em desacordo com os padrões estabelecidos pela ANVISA. No tocante aos testes de Salmonella, verificou-se presença deste microrganismo em 100% das amostras analisadas. Ações para o controle de qualidade dos sucos de frutas in natura comercializados no mercado ambulante da cidade de Juazeiro do Norte-CE tornam-se necessárias, dentre as quais se destacam o treinamento do pessoal envolvido na produção dos sucos e monitoramento das condições dos manipuladores. O aumento do comércio informal, com grande número de vendedores ambulantes, tem demonstrado a agilidade no aproveitamento de oportunidades de comércio. RESUMOO índice resto ingesta (IR) é um coeficiente útil para medir o desperdício alimentar que por sua vez mede qualidade, eficiência e serviços prestados dentro de uma Unidade de Alimentação e Nutrição (UAN). Para diminuição do extravio no âmbito do refeitório, é de grande valia o desenvolvimento de educação nutricional. O objetivo deste trabalho foi analisar o índice de resto-ingesta em uma UAN antes, durante e depois de uma intervenção nutricional. Trata-se de um estudo descritivo exploratório com abordagem quantitativa e qualitativa. A pesquisa foi desenvolvida em uma UAN de médio porte localizada no Município do Juazeiro do Norte, estado do Ceará, que produz aproximadamente 450 refeições diariamente no almoço. Os dados (IR) foram calculados de acordo com a seguinte fórmula: % de restoingesta = peso do resto x 100 / peso da refeição distribuída. Na primeira etapa desta pesquisa, verificou-se que o per capita do RI esteve entre 22,4g e 23g estando superior a média de 20g estipulada pela literatura. Durante ação, verificou-se a diminuição do índice resto ingesta em 1,14%, atingindo a média de 3,82% e a diminuição de 4,5g per capita. Após a interferência, o mesmo atingiu a média de 5,88%, sendo esta maior do que a encontrada antes da mediação. Diante dos resultados foi possível observar que os valores foram diminuídos ao decorrer do intermédio comprovando a eficácia da diminuição do desperdício alimentar através de um trabalho de conscientização e incentivo aos comensais.Palavras chaves: Índice resto-ingesta. Desperdício alimentar. Intervenção nutricional. ABSTRACTThe rest intake rate (IR) is a useful factor to measure food waste which in turn measures quality, efficiency and services within a UFN. To decrease the loss in the refectory, it is of great value to develop nutrition education. The aim of this study was to analyze the rest-intake rate in a UFN before, during and after a nutritional intervention. This is an exploratory descriptive study with quantitative and qualitative approach. The research was conducted in a medium-sized UFN located in Juazeiro Municipality, state of Ceará, which produces about 450 meals daily at lunch. The data (IR) were calculated according to the following formula:% of intake rest = weight restx 100 / weight distributed meal. In the first step of this research, it was found that the IR per capita was between 23g and 22,4g being higher than average of 20g stipulated in the literature. During the nutritional intervention, there was a decrease in intake rest content 1,14%, averaging 3,82% and decrease of 4,5g per capita. After the nutritional intervention, it reached an average of 5,88%, which is higher than that found before dietary intervention. With the results we observed that the values were decreased the course of nutritional intervention proving the effectiveness of the reduction of food waste through an awareness and encouraging diners.
The inappropriate use of synthetic antibiotics has become a global public health problem. Therefore, the study of new alternatives for the treatment of infectious diseases is relevant and natural bioactive products are on the rise. This study conducted a scientific prospection of bioactive natural products with promising applications in the chemical control of microorganisms. A systematic review of the most recent articles was performed according to the following three steps: (i) eligibility assessment, (ii) screening, and (iii) inclusion of articles and information extraction. There has been an increase in the number of scientific publications on bioactive natural products for microbial control in the CAPES and SciELO databases (2001–2021). Seventeen relevant articles were included, most of which focused on extracts. Ascorbic acid, chlorogenic acid, chrysin, and quercetin were the most cited compounds. Natural products were shown to be effective in inhibiting more than 30 microorganisms. A discussion was presented on the research trends.
