Carbohydrate-amylase complex of barley, rice, buckwheat and millet flours was studied. The cereal and pseudocereal flour is stated to be thermostable. Its gelatinization and liquefaction takes a long period. Addition of medium rye flour as an available and cheap source of amylolytic enzymes accelerates and increases the liquefaction of the gelatinized mass. The features of the starch component of the cereal and pseudocereal flour were found to require an increase of the pregelatinized flour preparation time. Mono- and disaccharides of the pregelatinized cereal and pseudocereal flour are mainly represented by glucose. Pregelatinized cereal and pseudocereal flours (except rice flour) contain excessive amount of amino nitrogen in comparison with traditional for-bread-baking pregelatinized rye flour. Pregelatinized cereal and pseudocereal flours can be used in native or dry form. The shelf life of dry pregelatinized cereal and pseudocereal flour is 3 months.
Worldwide interest in healthy food is promoting the production of non-traditional bakery products. Whole-wheat bread refers to such kind of products. Emmer as a crop with a valuable chemical composition is a promising source of raw materials for developing grain bakery products of increased nutritional value and giving them functional properties. The high content of proteins in emmer wheat characterized by a balanced amino acid composition, food fibers, and minerals is indicated. The possibility of using emmer wheat grain (Triticum dicoccum (Schrank.) Schuebl.) in bread making for the production of whole-wheat bread is analyzed. The chemical composition and quality indicators of emmer wheat grain of Runo variety grown in the Orel region are established. The conducted analysis of the content, wet gluten quality and autolytic activity changes (in terms of falling-number) in emmer wheat grain at steeping stage shows the necessity to develop technological methods that allow providing the production of high-quality whole-wheat bread. Methods for steeping emmer wheat grain have been developed that neutralize the deterioration of the technological properties of emmer wheat grain at the steeping stage and allow producing whole-wheat bread with high organoleptic and physicochemical characteristics.
Разработана технология производства леденцовой карамели повышенной пищевой ценности с добавлением микроводоросли Spirulina platensis. Исследовали влияние микроводоросли на органолептические, физико-химические показатели качества карамельной массы и карамели, ее пищевую ценность. Спирулину вносили на разных стадиях технологического процесса производства: во время приготовления карамельного сиропа, во время приготовления карамельной массы и на стадии ее формования. Дозировки спирулины составляли от 1 до 5% взамен сахара-песка по рецептуре. Установили, что при увеличении дозировки спирулины растет влажность и коэффициент растекания карамельной массы, карамель приобретает, зеленый цвет, свойственный для микроводоросли Spirulina platensis, содержание редуцирующих веществ практически не изменяется. Выявили, что оптимальным является введение спирулины на стадии уваривания карамельной массы. Показана целесообразность использования микроводоросли Spirulina platensis при производстве леденцовой карамели в дозировке 2,5% к массе сахара, что увеличивает пищевую ценность и позволяет рекомендовать такую карамель для широкого круга потребителей в качестве функционального продукта, а также не снижает устойчивость карамели к засахариванию в процессе хранения. Содержание натуральных пигментов спирулины позволяет исключить синтетические красители из рецептуры карамели и не требует дополнительного технологического оборудования.
