Исследовали возможность сбраживания редуцирующих сахаров, синтеза этанола и органических кислот штаммами таких психрофильных дрожжей, как Debaryomyces hansenii Н4651, Н433 и Н18-3 и Guehomyces pullulans KB1-34 при культивировании их при температурах 15; 20 и 25°C на питательной среде, приготовленной из ферментолизатов пшеничной соломы. Изучено влияние внесения солей на возможности штаммов. Исследовали глубокую утилизацию углеводов в ферментолизатах соломы при двухступенчатом способе культивирования. Эксперимент осуществлялся в два этапа: штаммы дрожжей культивировались с добавлением и без добавления сульфата аммония, солей калия и фосфора в аэробных условиях. Культивирование проводилось в колбах Эрленмейра объемом 250 мл в течение трех суток. После достижения необходимой биомассы перемешивание прекращалось, тем самым создавались анаэробные условия, необходимые для сбраживания и утилизации простых сахаров. Сбраживание так же продолжалось в течение трех суток. Состав остаточных углеводов и продуктов брожения анализировали методом ионно-эксклюзионной ВЭЖХ на колонке с катионитом Hitachi 2614 с двойным детектированием (рефрактометр + фотометр с длиной волны 210 нм). Полученные результаты показывают продолжительную активность внеклеточных целлюлолитических ферментов, которые гидролизуют олигомерные углеводы клетчатки соломы с образованием простых сахаров как субстрата для сбраживания с получением вторичных продуктов метаболизма. При ограниченном доступе воздуха происходит гетероферментативное кислотообразование с преобладанием пропионовокислого механизма, а также спиртовое брожение.
