PurposeThis review aims to summarize some of the relevant methodologies used to study traditional foods evaluated from the consumers' perspective. The analysis provided in this review will shed light on the methods as a valuable tool to stimulate research in traditional to promote cultural and nutritional revaluation of these products.Design/methodology/approachA systematic literature review was performed on 60 articles related to the study of traditional foods from the consumer's perspective.FindingsTen methodologies were found that address the study of this product category. European countries lead the research in traditional foods while research in Latin America, Africa and Asia is still incipient.Practical implicationsThis review shows the potential of each method to be applied in the study of traditional foods as well as the positive implications that research about these products could bring to regions/countries with a great diversity of traditional products.Originality/valueThis review reveals the need to approach the study of traditional foods and encourage future research on them, which in turn, will contribute to the cultural and integral development of local communities, even to the recovery of ingredients and local raw materials.
Amidst most indigenous groups in Mexico, traditional knowledge still prevails which constitutes local strategies that address the issue of food insecurity. This study aims to analyze the body of Traditional Agroecological Knowledge (TAK) of Nahuatl indigenous community of Ocotal Texizapan, Tatahuicapan, Veracruz, to understand the strategies practiced to achieve food security. Participatory observation and semi-structured and in-depth interviews at the household level (n = 20 families) revealed that Traditional Agroecological Knowledge and local life strategies are linked to the "milpa" (traditional agroecosystem), home gardening, gathering, hunting and fishing activities which are key components to achieve food security at the family level. Rain-fed and "tapachole" (residual humidity) milpa, based on sowing maize intercropped with several crops, are closely-related to direct empirical knowledge, the rational use of available natural resources, family labour, and local knowledge. Currently, changes in land use and the use of agrochemicals are increasing in the study community and depleting biodiversity affecting food security at the family level: a situation that endorses the importance of traditional agriculture (milpa), backyard livestock (hens, ducks, pigs) together with gathering, hunting and fishing among the Nahuatl families.
Objetivo: Realizar una reflexión sobre el aporte de la mujer en el agroecosistema, en el contexto específico de la complejidad del medio rural, de los factores decisivos de integración o de separación entre el hogar y la explotación. Diseño/metodología/aproximación: Se realizó una revisión de literatura sobre el agroecosistema, desde sus orígenes como concepto, con la teoría de sistemas hasta considerarlo como un sistema complejo, y el papel que ha desempeñado la mujer en la producción de alimentos dentro de éste. Resultados: La mujer ha desempeñado un papel crucial y preponderante en la sociedad, así como en los agroecosistemas, relacionada a los procesos alimentarios más vinculados al autoconsumo, en el contexto de una agricultura tradicional. En México, se le ha identificado, desde los orígenes de la agricultura, en diversas labores como arar la tierra, recoger las cosechas y atender a los animales. El 50 % de los alimentos que se consumen en todo el mundo son cultivados por las mujeres de las zonas rurales. Limitaciones del estudio/implicaciones: Si las mujeres tuvieran el mismo acceso que los hombres a los recursos productivos, podrían incrementar sus cosechas entre un 20 y 30 %, lo que supondría un aumento de la producción agrícola total de los países en desarrollo de entre un 2,5 y un 4%. Hallazgos/conclusiones: La mujer ha logrado desarrollar tareas imprescindibles en los agroecosistemas, sin embargo, no en todos los casos estos avances corresponden con las medidas adoptadas ni están dirigidos a la consecución de la igualdad entre hombres y mujeres como objetivo fundamental.
