Introdução O desperdício de resíduos provenientes das indústrias de suco tem demonstrado o interesse por pesquisas em aproveitar esses resíduos na alimentação animal, com o objetivo de aproveitar como alimentação alternativa na época de escassez de alimentos na região semiárida do nordeste assim como de diminuir o impacto ambiental em virtude de ser descartado no meio ambiente. Ao ser processado na indústria de suco, o bagaço do pedúnculo do caju (Anacardium occidentale L.) é desperdiçado e seu valor nutritivo reduzido, sendo utilizado como alimento para o animal ou descartado no ambiente. Este resíduo é rico em carboidratos (açúcar e amido) que podem ser metabolizados como fonte de energia para reações de biossíntese. Portanto, uma das alternativas para o aproveitamento destes resíduos na alimentação animal é o enriquecimento proteico utilizando micro-organismos para inoculação em substratos adequados. Todo substrato que possui na sua composição química alto teor de carboidratos pode ser empregado como fonte principal para o crescimento de fungos filamentosos ou leveduras (PANDEY, 2001). Neste contexto, o pedúnculo do caju que é rico em carboidratos enriquecido com fungos adequados, pode equiparar seu valor nutricional com os concentrados convencionais, pois será acrescido de proteínas microbianas, minerais como fosfato, potássio, cálcio, além de vitaminas do complexo B, importantes fatores de crescimento para os animais.O objetivo do trabalho foi produzir um concentrado proteico alternativo que venha atender as necessidades dos animais de período de escassez de alimentos na região semiárida do nordeste
