As perspectivas para a evolução da cultura são promissoras, tendo em vista o potencial de mercado do tomate orgânico e convencional tanto da forma in natura como industrializada.O aumento da demanda de alimentos orgânicos que são produzidos de forma a valorizar a diversidade biológica e livre de agressões ao meio ambiente é uma tendência que favorece a criação de novas oportunidades, como emprego e renda aos produtores da agricultura familiar.Ainda que a produtividade do sistema orgânico seja inferior e nem sempre atenda ao modelo de maximização lucrativa, busca a oferta de produtos de melhor qualidade ao consumidor. Evidências da mudança de hábito alimentar entre brasileiros sinalizam para uma maior demanda por produtos orgânicos (BORGUINI, 2002). Os consumidores diminuem suas exigências quanto ao atributo aparência externa, quando se conscientizam da importância dos alimentos orgânicos (BORGUINI; OETTERER; . Existe uma crença de que o sabor do tomate produzido pelo sistema orgânico é mais agradável em razão da maior doçura; fato afirmado pelos consumidores e produtores, que lhe atribuem a razão da maior procura (BORGUINI, 2002). Relatos de Borguini, Oetterer e Silva (2003) mostraram o maior teor de açúcar, o que de certa maneira, justifica o melhor sabor do produto orgânico que provém do grau de crescimento e maturidade fisiológica da colheita.Por ser o tomate um fruto perecível, o armazenamento adequado retarda o amadurecimento, mantém a qualidade e prolonga a conservação (BRACKMANN et al., 2007). Conventional (CS) tomatoes of the variety Raisa and Organic (OS), variety Santa Clara rustic, were stored at 23.5 ± 2 °C, RH 74% ± 5 and analyzed for mass, specific weight, ash, total solids, total soluble solids, total titrable acidity, total soluble solids/total titrable acidity ratio, pH, vitamin C, Salmonella spp., total coliforms, faecal coliforms, molds and yeasts, and sensory analysis (using Quantitative Descriptive Analyses -QDA). The time of storage was of 13 days for the conventional tomatoes and 14 days for the organic tomatoes. Weight loss (3,74%) was lower for the conventional tomatoes. Both fruits were similar in the physical, chemical, sensory and microbiological analysis in the different maturity stages. Originário da parte ocidental das Américas Central e do Sul, de onde foi levado para os outros continentes, o tomate, Lycopersicon esculentum Mill., continua crescendo em importância no panorama mundial. Apesar de o tomate fazer parte diariamente da alimentação do brasileiro, seja de forma in natura ou industrializada, ainda pouco se conhece sobre a qualidade das diferentes variedades cultivadas; assim como são escassas as referências sobre a qualidade do tomate orgânico.Alguns trabalhos foram conduzidos para estudar a diferença entre alimentos cultivados no sistema orgânico e convencional, contudo ainda há divergência. Os resultados mostraram que os alimentos cultivados nos dois sistemas, incluindo o tomate, se equivalem na maioria dos macronutrientes e cinzas (AFSSA, 2003), porém outro autor (BORGUINI, 2002) mostrou uma tendência do tomate cultivado no sistema orgânico apresentar maior quantidade de minerais.Pesquisas realizadas no oeste da Alemanha e descritas por Borguini, Oetterer e Silva (2003), visando descrever as diferenças de qualidade entre tomate orgânico e convencional, apontaram que o grau de crescimento e maturidade fisiológica da colheita apresenta significante efeito sobre alguns nutrientes, entre eles o teor de açúcar, o que justifica um melhor sabor do produto orgânico em razão da maior doçura. No entanto, na literatura poucos trabalhos são descritos. AbstractThe presence of organic products in the aisles of big supermarket chains indicates a market potential for these products. However, there is little technical and scientific information. Thus, the objective of this work was to determine the quality of tomatoes grown under conventional (CS) and organic (OS) systems, on sale in the metropolitan area of Curitiba, Brazil. Samples were evaluated in terms of mass, specific weight, ash, total solids, total soluble solids, total titratable acidity, total soluble solids/total titratable acidity ratio, pH, vitamin C, nitrates, nitrites, multiresidues. There were no significant differences between conventional and organic tomatoes, except in a 5 per cent difference in humidity, according to the Tukey test. Regarding the toxicological analyses, multiresidues and benzimidazole were not detected up to the limit of 0.04 mg.kg -1 and likewise carbendazim up to 0.1 mg.kg -1 . Pesticide residues belonging to the dithiocarbamate chemical group were identified at levels of 0.01 mg.kg -1 in two samples of conventionally cultivated tomatoes. These levels are below the recommended upper limit for mancozebe fungicide (2.0 mg.kg -1 CS2). A batata (Solanum tuberosum L.) é a olerícola de maior importância comercial para o Brasil (PAULETTI; MENARIN, 2004;PINELI et al., 2005;ZORZELLA et al., 2003) pelo seu alto potencial de rendimento e pelas suas propriedades nutricionais (CONCEIÇÃO; FORTES; SILVA, 1999), sendo essencial para países populosos por conter elevado teor de vitamina C, proteínas, carboidratos e potássio (NAKANO; DELEO; BOTEON, 2006) e, em nível, mundial é o quarto alimento mais consumido (PINELI et al., 2006).A indústria proporciona novas oportunidades de mercado, requerendo o uso de cultivares adequadas para cada propósito, tendo a necessidade de um volume de vendas mínimo e entrega durante o ano todo com produtos capazes de satisfazer os padrões de marketing rígidos da indústria de processamento (SALAZAR;BUSCH, 2001). AbstractPotato is considered one of the few foods able to nourish the growing world population for being a source of energy and containing high levels of proteins, vitamins, and minerals. However, these compounds suffer influence of several factors such as the use of cultivars, soil and climate characteristics, crop, harvest, and storage. Hence, the present paper aims to determine the potato chemical composition (cvs. Atlantic, Asterix, Innovator and Shepody), grown under four different levels (0, 120, 360 and 1080 kg K 2 O.ha -1 ) and two different sources of potassium (KCl e K 2 SO 4 ). Samples of crop water production were collected from a farm in the city of Fazenda Rio Grande/PR, Brazil. The following criteria were determined: vitamin C, moisture, proteins, fat, ashes, carbohydrates, energy, starch content, and potassium. The Atlantic cultivar presented the highest average ashes content (0.93%) and potassium (528.80 kcal.100 g -1 ); Asterix presented the highest moisture content (81.47%); Innovator presented the highest proteins (2.25%), fat (0.06%), carbohydrates (17.72%), energy (80.40 kcal.100 g -1 ) and starch content (16.45%); and the Shepody presented the highest vitamin C amount (31.01 mg.100 g -1 ). Purpose: to investigate the neuropsychomotor development, as well as nutritional and cognitive/emotional aspects of children aged 0 to 5, attending early childhood education centers, aiming at early identification and prevention of risks and delays in children’s development. Methods: the population studied was composed of 85 children attending two early childhood education centers. The children’s development approach was contextual, by means of ludic physical therapy assessment, by using the DENVER II scale; complementary assessments of their nutritional status were also performed, based on anthropometric measurements of weight and height, as well as evaluations of the cognitive/emotional development aspects through the Free Hand Drawing and Human Figure Drawing Tests. Results: neuropsychomotor development was found to be within normal range in 69.41% of the children and questionable in 30.58% of them. The significant variable affecting the result was found to be the class in which some children were inserted. In the scale utilized, the best performance was considered to be the gross motor skills (7.69%) and the most questionable performance occurred in the language skills (58.85%). As for nutritional data, it was discovered that 27.06% of the children had some nutritional risk, 22.35% had obesity risk and 4.71%, malnutrition risk. In the cognitive/emotional analysis, the result was that 34.37% of the children presented signs of difficulties related to adaptation and socialization or self-esteem. Conclusion: in the present study, about one-third of the children participating presented questionable neuropsychomotor development, especially in the field of language; in this regard, the class to which the children belong may constitute a barrier to their development. These children presented nutritional risks, with a tendency towards obesity, as well as the possible difficulties regarding adaptation and socialization or self-esteem.
Summary Passion fruit is the fourth most consumed fruit by the Brazilian population, especially in the form of juice, usually associated with the addition of sucrose. This study aimed to evaluate the ideal sucrose concentration, and its impact on the consumer's acceptance of passion fruit nectar, sweetened with non‐caloric sweeteners as sucrose replacers in five Brazilian geographic regions. The acceptance scores evaluated by anova and Tukey's Honestly Significant Difference test indicated that sucralose‐sweetened samples were the most accepted, with no differences from the sucrose‐sweetened sample (P < 0.05), with a positive purchase intention in the five regions studied (>50%). However, differences in the acceptance scores were observed for the other sweeteners among the regions. Despite the difference in the sweetness perception among the Brazilian geographic regions, it may not be the only determining factor in the acceptance of passion fruit nectar sweetened with non‐caloric sweeteners.
