El presente estudio tuvo por finalidad la evaluación del efecto de la sustitución parcial de la harina de trigo (HT) por torta de sacha inchi (TSI) sobre las propiedades reológicas de una masa de pan dulce, así como las propiedades sensoriales de los bizcochos obtenidos. Se realizaron tres tratamientos y un control (T1, 100%HT; T2 90%HT/10%TSI; T3, 80%HT/20%TSI y T4, 70%HT/30%TSI) a los que se les determinó las propiedades reológicas utilizando los equipos alveógrafo y consistógrafo. Se produjeron los bizcochos y se evaluaron las propiedades sensoriales de la mezcla (HT/TSI) con mejor comportamiento reológico, así mismo se realizaron análisis proximales, físicos y químicos de dichos productos. Los resultados del estudio reológico de la masa de pan dulce con cada mezcla de harina de trigo-torta de sacha inchi mostraron un mejor comportamiento en la mezcla T2. Por otro lado la evaluación sensorial (T1, 100% HT; T2, 90% HT/10% TSI), muestra buena aceptabilidad, y la composición proximal (humedad, cenizas, proteína, grasa, fibra y carbohidratos) fue mejor para el tratamiento T2 así como las propiedades físicas (peso, volumen, volumen específico) y química (acidez total) no presentaron diferencias.
Ají jalapeño (Capsicum annuum L.) encurtido fue secado en aire caliente a 70°C, 50°C, y 35°C, y en cámara de refrigeración no frost (10°C); hallándose las curvas de cinética de secado, el tiempo de secado (19 h a 744 h), alta correlación entre tasa de humedad y tiempo de secado y entre temperatura y tiempo de secado; la difusividad efectiva (6.59E-11 m2.s-1 a 1.2176E-9 m2.s-1), la energía de activación (39.90 kJ/mol), los sólidos solubles, el pH, y la retención de vitamina C de 133% a 10°C pero perdiéndose al menos el 50% de vitamina C al secar con aire caliente.
La gran diversidad de recursos alimenticios que ofrece nuestro país, no sólo tiene origen agrícola pecuario, sino también mineral. Este es el caso del «cchacco», arcilla comestible, considerado como suplemento dietético de gran consumo entre los pobladores del altiplano peruano-boliviano. El objetivo del estudio fue el de conocer más sobre las características físicas y químicas de este producto, establecer la calidad sanitaria del mismo, así como formular una mezcla que incluyera «cchacco». Los análisis físicos y químicos fueron desarrollados de acuerdo a los métodos aplicables a alimentos. Los constituyentes analizados fueron: humedad 7,78%, sólidos totales 92,21%, cenizas 91,80%, nitrógeno 0,0028%, proteína 0,0174%, pH de 6y densidad de carga 0,6936 gr/ml. Adicionalmente se halló creatinina 3,58 mg%, glucosa 225 mg% y restos de vegetales.La calidad sanitaria del producto fue determinada, dadas las condiciones de manipuleo y expendio observadas. Los resultados fueron negativos para los siguientes microorganismos: enterobacterias, estreptococos, estafilococos, vibrium cólera, salmonella, bacilo tuberculoso, bongos y levaduras. Finalmente, mediante la preparación de una mezcla tipo salsa, se definió la cantidad adecuada de «cchacco» que debe añadirse, así como la mejor alternativa de sabor.
Objetivo: Estudiar el posible efecto antiinflamatorio de los extractos totales de las catáfilas externas de la variedad roja arequipeña de producción convencional y de la amarilla orgánica. Material y Métodos: Investigación experimental se desarrolló en el Laboratorio de Facultad de Farmacia y Bioquímica de la Universidad Nacional Mayor de San Marcos. Se empleó ratones machos de la línea Balb/c, en grupos de 6 individuos cada uno totalizando ocho grupos. El primer día se les inyectó 5 ml de aire subcutáneo en la zona del lomo previamente depilado. Después de un periodo de descanso de dos días se administró a los seis primeros grupos de ratones los extractos completos provenientes de las catáfilas de Allium cepa L de la variedad amarilla orgánica y de la variedad roja arequipeña al 10% (10 mg de extracto, 9,5 ml de agua destilada estéril y 0,5 ml de Twin), a las dosis de 100 y 300 mg/kg de peso corpóreo; AINE (ibuprofeno, 1,2 mg/kg de peso corpóreo) al séptimo grupo de ratones y corticoide (dexametasona, 4 mg/kg de peso corpóreo) al octavo grupo, por tres días. Al sexto día se inyectó a todos los grupos 2,5 ml de aire subcutáneo y finalmente el séptimo día se les administró carragenina (1ml al 1%), procediéndose al sacrificio después de seis horas. A cada grupo se tomó muestras de sangre para las pruebas hematológicas y PCR. Resultados: La cebolla (Allium cepa L) de las variedades “perita” amarilla orgánica y la roja arequipeña de producción convencional, mostraron efecto antiinflamatorio en comparación con dexametasona e ibuprofeno, en dosis de 100 y 300 mg/kg de peso corpóreo suplementado a ratones machos de la línea Balb/c. Los resultados hematológicos analizados por el ANOVA y la prueba de Dunnett (α=0,01) mostraron diferencias significativas, sin embargo, las variaciones estuvieron dentro de los valores normales. Conclusión: La Allium cepa L., variedad amarilla orgánica y roja arequipeña tienen efecto antiinflamatorio, y desde el punto de vista del análisis hematológico sugieren desempeño semejante al de la dexametasona.
Empleando las catáfilas externas de cebolla (Allium cepa L.) de las variedades roja arequipeña de producción convencional y “perita” amarilla orgánica como recurso, se obtuvieron nueve estructuras de flavonoides: dos flavonoles 3',4',5,6,7,8- hexametoxi-O-Azúcarflavonol y 4',5,7-trihidroxiflavonol conocido como kaempherol el cual es un potente antioxidante y siete flavonas: 3',4',5,8-tetrametoxi-ORflavona; 4',5,6,7-tetrametoxiflavona; 5,7, dimetoxi-6-O-Azúcarflavona; 5-hidroxi-6.7.8-trimetoxiflavona: 4',5,7-trihidroxi-3',6,8-trimetoxi-flavona; 3',4',5',6-trimetoxi-7-O-Azúcarflavona; 3',4',5,6,7,8-hexametoxi- 3-O-Azúcarflavona; y 3',4',6,7,8-pentametoxi-flavona. Los extractos deshidratados fueron añadidos a leche fluida y queso fresco, con notable éxito.
