El objetivo del presente estudio fue obtener ácido láctico (AL) a partir del almidón de ñame espino post-cosecha (Dioscorea rotundata) mediante fermentación del almidón usando Lactobacillus delbrueckii ssp. bulgaricus y Streptococcus thermophilus a 37 ºC. Se lavaron 5 Kg de tubérculos frescos, descortezaron, redujo de tamaño, licuó y filtró; el filtrado se decantó lavándose el sedimento con agua destilada, filtrados al vacío y secados a 60 ºC por 12 h, seguido de molienda para su posterior empaque. El almidón se caracterizó determinando el contenido de fibra cruda, cenizas, grasa, proteínas, humedad residual y amilosa. El porcentaje de AL se determinó por titulación de 100 mL de muestra fermentada con NaOH usando fenolftaleína como indicador y la concentración se midió por cromatografía. Se obtuvo un almidón con porcentajes de 78,46, 26,78 y 73,22 % de carbohidratos totales, amilosa y amilopectina, respetivamente. Se encontró que el pH afecta significativamente las actividades enzimáticas y la asimilación de nutrientes por parte de los microorganismos utilizados y que la fermentación del almidón de ñame con los microorganismos seleccionados produjo un 16,26% de AL. Se concluye que el AL puede ser obtenido a partir del almidón de D. rotundata.
Los productos naturales poseen una amplia variedad de actividades biológicas que nos permiten encontrar nuevas alternativas terapéuticas. En este trabajo se evaluó laactividad antibacteriana in vitro del extracto etanólico del peciolo de Rheum rhabarbarum frente a cepas ATCC de Staphylococcus aureus, Staphylococcus epidermidis,Klebsiella pneumoniae, Pseudomonas aeruginosa y Escherichia coli, y se determinó la concentración mínima inhibitoria (CMI) y la concentración mínima bactericida(CMB). Para solubilizar se empleó dimetilsulfóxido (DMSO) al 1%. Los resultadosobtenidos demuestran que el extracto posee actividad antibacteriana, con valores deCMI ≥ 700 μg/mL para el extracto etanólico frente a Staphylococcus aureus, Staphylococcusepidermidis, Klebsiella pneumoniae, Pseudomonas aeruginosa y Escherichia coli.Su efecto podría ser de tipo bacteriostático y no bactericida. Por tanto, se concluye que la especie vegetal Rheum rhabarbarum es considerada como promisoria para el control bacteriano.
Currently, the food industry searches for innovation and the use of natural and more economical resources. With this in mind, the industrial application of whey was used to elaborate a yogurt-type fermented milk drink with Aloe vera L. crystals (Asphodelaceae) and Passiflora ligularis Juss. (Passifloraceae). For this purpose, A. vera crystals and granadilla or passionfruit pulp, were extracted and added to the four formulations established. Physicochemical, bromatological, microbiological, and sensory analyses (hedonic test) were carried out. The formulations with the highest content of A. vera (F4) and granadilla (F2) showed the best results in bromatological, microbiological, and sensory properties. The A. vera crystals and the granadilla pulp are of great industrial value due to the improvement that their addition gave to the physicochemical, bromatological, microbiological, and sensory properties of the yogurt-type fermented milk drink.
