Los mapas conceptuales son una técnica que se utiliza para obtener una representación visual de las ideas de una persona sobre un concepto o un conjunto de conceptos relacionados. Concretamente, en este trabajo, a través de una metodología cualitativa, analizamos los mapas conceptuales propuestos por 52 grupos de estudiantes de Maestro de Educación Primaria con el fin de averiguar las características de los mapas y el grado de adecuación de los contenidos que incluyen en lo que respecta a la enseñanza de la nutrición humana en el 3º ciclo de Educación Primaria. Los participantes cursaban Maestro de Educación Primaria, y la recogida de datos se realizó a través de una actividad formativa incluida en el tema ¿qué enseñar sobre Ciencias en Educación Primaria? Los resultados muestran que los mapas son una herramienta útil para trabajar en la formación docente pues permiten organizar, sintetizar y comunicar lo que saben los alumnos. Además, a través de este trabajo se observa que los estudiantes poseen destrezas aceptables a la hora de representar conceptos/ideas en un mapa conceptual, aunque el nivel de adecuación de los conceptos/ideas sobre nutrición humana y sus relaciones suele ser medio o bajo. Estos resultados constituyen una llamada de atención para la formación docente, tanto inicial como permanente, pues muestran la incapacidad de ésta para cambiar prioridades en lo que a la selección de contenidos se refiere.

Se analizan 1.332 actividades de enseñanza y 227 cuestiones de evaluación dirigidas al estudio de la nutrición humana para conocer las ideas clave que enseñan y evalúan diez profesores españoles y diez portugueses de 5.º/6.º curso de educación primaria. Para ello, se emplean dosieres de análisis basándonos en la ciencia escolar, que atienden al concepto de nutrición, a los sistemas implicados, a la alimentación saludable y a la relación alimentación/nutrición y medio. Mediante el análisis de resultados se establecen niveles de adecuación y perfiles docentes. Los profesores españoles enseñan sobre todo ideas asociadas a los órganos/sistemas, y los portugueses, el concepto de nutrición a nivel celular. En general, se evalúan menos aspectos que los que enseñan. Respecto a los perfiles docentes, los profesores españoles alcanzan uno medio-bajo, y los portugueses, uno alto-medio. Finalmente, se presentan recomendaciones didácticas derivadas de los resultados.
Resumen. Se analizan un total de 1.340 actividades correspondientes a textos de primaria y ESO de tres editoriales de amplia implantación, dirigidas al estudio de tres tópicos: materia, animales y vegetales. Se estudia, además de la importancia otorgada por las editoriales a estos tópicos, el objetivo que persiguen las actividades y los procedimientos que enseñan. Se detecta que en primaria se insiste más en seres vivos que en materia. La aplicación de la teoría que figura en el texto y la adquisición de conocimientos son los objetivos más abundantes en las actividades, siendo prácticamente inexistentes las dirigidas a la indagación. En coherencia con ello, los tipos de procedimientos más abundantes son la comunicación y la organización de la información en detrimento de los asociados a la resolución de problemas (formulación de hipótesis, análisis de datos, control de variables...). The objective of this study is to analyse a total of 1.340 activities which correspond to Primary School and Compulsory Secondary Education textbooks produced by three widely established publishing houses and which are aimed at studiyng the following three topics: matter, animals and vegetables. The importance given to these topics by the publishing houses, the objective which the activities pursue as well as the procedures they teach are also studied. A greater emphasis on living beings than on matter has been detected in the Primary School material. Applying the theory which figures in the textbooks and acquiring the knowledge contained therein are the most abundant objectives which are found in the activities, whereas those activities which are aimed at investigation tasks are virtually non-existent. In tune with what has been said before, the most abundant types of procedures are the communication and organisation of information to the detriment of the ones that are associated with problem solving (formulating hypotheses, data analys, controlling variables...).
[Recibido en noviembre de 2012, aceptado en febrero de 2013] El objetivo del trabajo es conocer las habilidades cognitivolingüísticas que exigen las cuestiones de evaluación propuestas por profesores en formación, respecto a determinadas ideas clave asociadas a la nutrición humana, averiguar en qué medida, estos profesores identifican las citadas habilidades en las preguntas planteadas y qué importancia otorgan a dichas preguntas. Se analizaron 225 cuestiones, propuestas por 37 alumnos que cursaban el Máster de Profesorado de Educación Secundaria, de la Universidad de A Coruña, durante una actividad formativa incluida en el tema de evaluación. Los resultados muestran que si bien los futuros docentes tienen en cuenta las distintas habilidades, establecen diferencias según la idea clave considerada. Sin embargo, no siempre son conscientes de la habilidad que solicitan en las preguntas que plantean. En cualquier caso, la valoración que realizan de estas últimas está más condicionada por el contenido concreto que por la habilidad que en ellas se solicita. Todo ello sugiere la necesidad de que la formación docente insista en el uso de las diferentes habilidades cognitivas y lingüísticas en relación a temáticas específicas.Palabras clave: Educación Secundaria; formación inicial; habilidades cognitivo-lingüísticas; nutrición humana.. Cognitive-linguistic skills and human nutrition in the initial training of secondary school teachersThe objective of this essay is to learn about the cognitive-linguistic skills required by the evaluation questions suggested by teachers in training, with regards to certain key ideas associated with human nutrition. It also intends to find out to what extent these teachers identify the aforementioned skills in the suggested questions and how much importance they give to the latter. 225 questions were analysed and they were suggested by 37 students studying for a Masters in Secondary School Teaching at the University of La Coruña. This was done during a training activity included in a class about evaluation. The results show that even though the future teachers bear the various skills in mind, they establish differences according to the key idea under consideration. However, they are not always conscious of the skill they are requesting in the questions they suggest. In any case, the value they give to said questions is more conditioned by the specific content than by the skill they are requesting. All this suggests the need for teacher training to insist on the use of various cognitive-linguistic skills relating to specific subjects.
