The objective of this study was to assess the yield and fruit quality of apple produced with a conventional and an organic production systems in Southern Brazil. The orchards consisted of alternate rows from 10 to 12-year old 'Royal Gala' and 'Fuji' apple trees on M.7 rootstocks, grown as slender spindles, on 4x6 m spacing. Eighteen apple trees of each cultivar and management system were randomly selected and assessed for nutrition, flowering, fruit set, yield, and fruit quality during two growing seasons (2002/2003 and 2003/2004). The organic management system resulted in lower concentrations of K, Mg, and N in leaves and fruits, and in smaller fruits for both cultivars, and lower fruit yield for 'Fuji' than from the conventional production system. For both cultivars, fruits from the organic orchard harvested at commercial maturity had a more yellowish skin background color, higher percentage of blush in the fruit skin, higher soluble solids content, higher density, higher flesh firmness, and higher severity of russet than fruits from the conventional orchard. Fruit from the organic orchard had lower titratable acidity in 'Royal Gala', and higher incidence of moldy core and lower incidence of watercore in 'Fuji', than fruit from the conventional orchard. A non-trained sensory panel detected no significant differences for fruit attributes of taste, flavor and texture between fruit from the production systems for either cultivar.

O objetivo deste trabalho foi avaliar o efeito da aplicação pré-colheita de aminoetoxivinilglicina (AVG) e ethephon sobre a maturação da maçã 'Gala' colhidas em diferentes datas. Os tratamentos avaliados foram: controle, ethephon (140g ha-1), AVG (125g ha-1), AVG (125g ha-1) + ethephon (140g ha-1), AVG (95g ha-1) e AVG (95g ha-1) + ethephon (140g ha-1) em combinação com quatro épocas de colheita (131, 138, 145 e 152 dias após o pleno florescimento). A aplicação pré-colheita de AVG, seguida ou não de ethephon, proporcionou frutos com maior firmeza de polpa, cor de fundo da epiderme mais verde e menor produção de etileno, respiração e índice iodo-amido. Entretanto, o AVG retardou a evolução da cor vermelha dos frutos, principalmente na maior dose. A aplicação de ethephon, em plantas anteriormente tratadas com AVG, proporcionou frutos com cor vermelha semelhante ao tratamento controle sem prejudicar a ação do AVG no controle da maturação dos frutos. O atraso na colheita causou amarelecimento da epiderme, índice iodo-amido mais elevado, alta produção de etileno e menor acidez titulável.

Resumo -O objetivo deste trabalho foi avaliar o efeito do estádio de maturação, da temperatura e da modificação da atmosfera, durante o armazenamento, sobre a taxa respiratória de cultivares de maçã, caqui, quiuí e pêssego. A relação entre taxa respiratória e o potencial de armazenamento foi avaliada. Os tratamentos utilizados foram dois estádios de maturação (verde-maduro e maduro), três temperaturas (0, 10 e 20ºC) e duas condições de armazenamento (armazenamento refrigerado e atmosfera modificada). As cultivares avaliadas foram Gala e Fuji, em maçã, Fuyu, Giombo, Rama Forte, Taubaté e Coração de Boi, em caqui, Bruno e Hayward, em quiuí, Eldorado, Jubileu e Maciel, em pêssego. Maçãs 'Gala', armazenadas a 0ºC, e 'Fuji', a 0 e 10ºC, não apresentaram pico respiratório característico de frutos climatéricos. A temperatura exerceu forte efeito sobre a respiração; o incremento na taxa respiratória, pelo aumento da temperatura, variou conforme a espécie e a faixa de temperatura analisada. A modificação da atmosfera, em média, reduziu a taxa respiratória em 14,3%, nas frutas armazenadas a 0°C. A taxa respiratória é influenciada pelos fatores cultivar, temperatura de armazenamento e modificação da atmosfera.Termos para indexação: armazenamento, pós-colheita, atmosfera modificada. Respiratory rate of fruits of temperate climateAbstract -The objective of this work was to evaluate the effect of ripening stages, temperature and modification of atmosphere during storage on the respiratory rate of some cultivars of apple, persimmon, kiwi and peaches, as well as the relation between respiration rate and storage potential. Evaluated treatments were two ripening stages (mature-green and tree-ripe), three temperatures (0, 10 and 20ºC) and two storage conditions (cold storage and modified atmosphere). The cultivars Gala and Fuji, of apple, Fuyu, Giombo, Rama Forte, Taubaté and Coração de Boi, of persimmon, Bruno and Hayward, of kiwi, Eldorado, Jubileu and Maciel, of peaches were evaluated. 'Gala' apples, stored at 0ºC, and 'Fuji' apples, at 0 and 10ºC, did not show a climateric respiratory rise. Temperature had a strong effect on the respiration; the increment in respiratory rate, by increasing of temperature, varied according to species and temperature. The modification of atmosphere, on average, reduced the respiratory rate in 14.3%, at 0°C. The objective of this work was to evaluate the effect of rosemary, cinnamon, citronella grass, and clove essential oils on the in vitro growth of Penicillium expansum, on the diameter of blue mold lesions, and on the physical and chemical attributes of 'Fuji' apples stored under refrigeration for different periods of time. The compositions of the essential oils were determined, and their effects on the growth inhibition, number, and viability of fungal spores in vitro were evaluated at 0, 100, and 1,000 μL L-1 oil concentrations. At postharvest, evaluations were performed for fruit treated with 0, 50, 100, and 500 μL L-1 essential oil and kept under refrigeration for 30 days, and for fruit treated with 0, 100, and 500 μL L-1 oil and kept under refrigeration for two days. The essential oils - eucalyptol (rosemary), eugenol (cinnamon), citronellal (citronella), and eugenol (clove) - reduce the growth, number, and viability of P. expansum spores 24 hours after the induction to germination, as well as the diameter of blue mold lesions in apples, except for citronella oil at 500 μL L-1 after 30 days of cold storage. There are no changes in the physicochemical attributes of apples, treated with different concentrations of the oils after refrigeration for five months, followed by seven days at room temperature.
