A salmonelose é uma das principais zoonoses de importância para Saúde Pública no mundo, evidenciando-se pelas suas características de endemicidade, alta morbidade e, sobretudo, pela dificuldade para o seu controle. O presente estudo teve como objetivo verificar a ocorrência de Salmonella spp. em amostras de linguiças mistas produzidas artesanalmente no Município de Terra Roxa - PR. Foram visitados seis mercados e três açougues, totalizando 150 amostras coletadas entre novembro e dezembro de 2018, sendo acondicionadas e transportadas ao Laboratório de Microbiologia da UFPR – Setor Palotina. Após análise microbiológica convencional, 16 amostras foram positivas para Salmonella spp. e posteriormente submetidas ao teste de suscetibilidade antimicrobiana pela técnica de disco-difusão e à PCR. Durante as coletas foram aplicados questionários epidemiológicos para verificar a presença de fatores de risco. As amostras foram 100% resistentes a amoxicilina + ácido clavulonato e o antibiótico com menos resistência foi a ciprofloxacina. Na técnica da PCR, apenas quatro amostras foram positivas. Estas foram submetidas ao sequenciamento e à sorotipagem para confirmação, cujo resultado foi Salmonela Typhimuriun. Nenhum fator de risco analisado foi significativo. A presença de Salmonella spp. indica contaminação da matéria-prima, portanto as linguiças do tipo mistas artesanais, precisam receber maior atenção quanto aos aspectos higiênico-sanitários de sua produção, armazenamento e comercialização. Os proprietários dos estabelecimentos foram orientados sobre a higienização das mãos e dos utensílios e também a implementar uma rotina de trabalho.
