The objective of this study was to characterize the chemical composition and lipid profile of colostrum and milk of purebred Quarter Horse mares. Thirty-four (34) purebred mares were selected, which were then separated into groups according to age, birth order and lactation stage. Colostrum samples were collected in the first six hours after delivery and milk samples from the 7 th postpartum day, with intervals of 14 days until the end of lactation. The samples were refrigerated and sent to the Milk Laboratory of the University ( Laboleite — UFRN ), where they were analyzed for chemical composition. Colostrum was assessed by refractometry. The lipid profile was determined by gas chromatography through a separation of methyl esters. The data were tabulated and subjected to descriptive statistics and analysis of variance by the F-Test, and the groups were compared by the Tukey test using a significance level of 5%. There was high protein content and reduced lactose content for the colostrum of the Quarter Horse mares, differing from other breeds. The milk composition was not influenced by the mares’ age. However, variations in the lactation stage and in the birth order of the Quarter Horse mares altered the milk’s chemical composition. There is variation in the lipid composition of milk according to the lactation stage, without changing the characteristic profile of the mares’ milk or diminishing the nutritional quality of the lipid fraction.
Este trabalho teve por objetivo desenvolver e avaliar a aceitação e intenção de compra de fermentado de kefir saborizado com diferentes concentrações de polpa de goiaba pasteurizada. Para sua elaboração, o leite in natura foi adicionado de 2% de leite em pó e em seguida, submetido ao tratamento térmico a 90 ºC/3 min e resfriado a 25 ºC, etapa esta em que foi inoculado 3% dos grãos de kefir. A fermentação ocorreu à temperatura ambiente a 25 ± 2 ºC/24h. Após recuperação dos grãos, o kefir foi armazenado a 5 ºC/24h e em seguida foram estabelecidas quatro formulações distintas: K0: kefir natural com 12% de sacarose sem adição de polpa de goiaba, K1, K2 e K3: kefir saborizado com 8%, 10% e 12% de polpa de goiaba + 12% de sacarose, respectivamente. As formulações desenvolvidas apresentaram valores de pH variando de 3,5 a 3,7 e acidez titulável com variações de 1,2 a 1,5% de ácido lático. Verificou-se que houve diferença significativa (p < 0,05) para os atributos cor, aroma, sabor e aceitação global das amostras K0, K1 e K2 em relação a K3, bem como, da intenção de compra. Entretanto, o atributo consistência não foi significativamente afetado. A formulação K3, com 12% de polpa de goiaba apresentou melhores médias para todos os atributos analisados (cor: 8,5, sabor: 7,7, aroma: 7,4 e aceitação global: 7,7) e melhor intenção quanto à compra (4,3), portanto, nas condições propostas é a concentração mais indicada para sua saborização.
RESUMOO leite de cabra é um excelente alimento que pode garantir efeitos benéficos à saúde humana, porém suas características são facilmente alteradas pela ação de microrganismos e pela manipulação. O presente estudo teve como objetivo avaliar a qualidade microbiológica do leite caprino em 11 propriedades rurais da região de Macaíba/RN. As amostras de leite e dos swab das mãos dos ordenhadores, utensílios e tetos caprinos foram coletadas e transportadas em caixa térmica (10 ºC -12 ºC) para o Laboratório de Engenharia de Alimentos da UFRN. Os microrganismos pesquisados foram as bactérias aeróbias mesófilas, psicrotróficos, estafilococos coagulase positiva e negativa, coliformes a 35 ºC e a 45 ºC. Com relação às mãos dos ordenhadores, 56% apresentaram contaminação por bactérias aeróbias mesófilas. Nos utensílios analisados foram encontrados, em 18,2%, coliformes a 45 ºC e estafilococos coagulase positiva, bem como estafilococos coagulase negativa (63,6%) e coliformes a 35 ºC em 27,3% das amostras. Para o leite caprino cru resfriado, 10% das amostras apresentaram contaminação por psicrotróficos e 17% apresentaram coliformes a 45 ºC. Com re lação aos tetos caprinos, 52% das amostras apresenta ram contagem de bacté rias aeróbias mesófilas acima de 10 3 UFC/teto, 61% apresenta ram estafilococos coagulase negativa e 10% estafilococos coagulase positi va, sendo este um dos principais agentes causadores da mastite. This study aimed to develop Greek style yoghurts with the addition of bovine colostrum. Four yoghurt formulations were produced with different colostrum content (0%, 10%, 20% and 30%). The fat, protein, total solids, ash, retinol levels were quantified as well as the colour was measured. A sensory analysis was conducted with 103 untrained panelists, evaluating the attributes of appearance, aroma, consistency, flavour, overall acceptance and the purchase intention. Colostrum addition increased the fat and protein levels in the yoghurt formulations. The Greek style yoghurts with bovine colostrum reached sensory acceptance above 70% for all attributes.
Our aim was to evaluate the sensorial acceptance and consumption intent of pasteurized milks and coalho cheeses produced with milk with low (80,000 cells/mL) and high (480,000 cells/mL) somatic cell count (SCC) level. Low SCC pasteurized milk (LCC) obtained statistically higher scores on the aroma, consistency, flavor and overall liking attributes in comparison with high SCC pasteurized milk. LCC mean scores for all attributes were statistically higher than high SCC Coalho Cheese. High SCC in raw milk has a detrimental effect on the quality of pasteurized milk and coalho cheeses as it presented lower sensory acceptance, failing to meet the consumer's desired expectations.
