* A quem a correspondência deve ser enviada. -INTRODUÇÃOAs Boas Práticas de Fabricação (BPF) são um conjunto de normas empregadas em produtos, processos, serviços e edificações, visando a promoção e a certificação da qualidade e da segurança do alimento. No Brasil, as BPF são legalmente regidas pelas Portarias 1428/93-MS [5] e 326/97-SVS/MS [7]. A qualidade da matéria-prima, a arquitetura dos equipamentos e das instalações, as condições higiênicas do ambiente de trabalho, as técnicas de manipulação dos alimentos, a saúde dos funcionários são fatores importantes a serem considerados na produção de alimentos seguros e de qualidade, devendo, portanto, serem considerados nas BPF. A avaliação dessas BPF em estabelecimentos de produção ou de comercialização de alimentos, por meio de utilização de questionários apropriados, é citada como subsídio para qualificação e triagem de fornecedores [2,19], como base para vistoria fiscal sanitária [3, 4,8,15], para a verificação, pelo próprio estabelecimento, do cumprimento das BPF [10,21] ou como base para a implantação do sistema Análise de Perigos e Pontos Críticos de Controle (APPCC) [12].Neste trabalho, é apresentada uma metodologia para a avaliação quantitativa de questionários tipo check list elaborados para avaliar as BPF em indústrias de pão de queijo. Os questionários foram aplicados a uma indústria de porte pequeno, localizada em Belo Horizonte, MG. Para certificar a eficiência da metodologia, a indústria foi também avaliada por análises microbiológicas das matérias-primas, da massa congelada de pão de queijo, do ar ambiente, das mãos dos manipuladores e dos equipamentos e utensílios. -MATERIAL E MÉTODOS RESUMOEste trabalho objetivou adaptar uma metodologia para a avaliação da aplicação das Boas Práticas de Fabricação (BPF) em indústrias de massas congeladas de pães de queijo. Foram utilizados nove questionários englobando perguntas pertinentes à avaliação das condições de infra-estrutura, higienização e processamento adotados nessas indústrias. Para a avaliação quantitativa dos dados, cada item dos questionários foi classificado como recomendável, necessário ou imprescindível e pontuado (1, 2 e 4 pontos, respectivamente). Os questionários foram aplicados a uma indústria de pão de queijo localizada em Belo Horizonte, Minas Gerais. A pontuação ponderada do estabelecimento (PPE) foi calculada atribuindo-se pesos calculados em função da freqüência relativa dos itens imprescindíveis de cada bloco. A PPE foi utilizada para a classificação da indústria como excelente, muito boa, boa, regular ou ruim. Para certificar a eficiência da metodologia, a mesma indústria foi avaliada por análises microbiológicas das matérias-primas, das massas congeladas de pão de queijo, do ar ambiente, das mãos dos manipuladores de alimentos e dos equipamentos e utensílios. The levels of cholesterol and 7-ketocholesterol were measured in raw Atlantic hake (Merluccius hubbsi) and smooth weakfish (Cynoscion leiarchus) fillets and in fillets subjected to the following cooking methods: baking in an electric or microwave oven; baking, grilling or stewing in a steam-convection oven; simmering on a stove; electric grilling; and deep frying. The raw samples from both fishes exhibited significantly (p < 0.05) higher cholesterol levels (62.71 ± 6.06 mg/100 ge74.16 ± 3.96 mg/ 100 g) than the processed fillets. In all of the samples, 7-ketocholesterol was detected at significantly (p < 0.05) different levels depending on the cooking method and the type of fish. Steam cooking keeping the surface of the product moist produced small decrease in the cholesterol content (26.65%e29.96%) and a low level of 7-ketocholesterol in the samples (6.90 ± 0.21 mg/ge6.47 ± 0.28 mg/g). Baking in electric or steam-convection ovens at high temperatures and long times greatly reduced the cholesterol content (52.77%e65.08%), which was associated with a large increase in 7-ketocholesterol levels (11.54 ± 0.45 mg/ge13.94 ± 1.17 mg/g). These results indicate the necessity of revising the baking procedures for fish to increase the healthiness of food.
Purpose This study aims to understand consumer behavior related to the purchase of meals by delivery services before and during the coronavirus disease 2019 (COVID-19) pandemic in Brazil. Design/methodology/approach An online survey was conducted between September and October 2020. The total number of valid responses was 971. Findings About 55% of the participants reported a decrease in consumption or not having consumed food delivery during the pandemic. Of the total, 48.3% feared contracting COVID-19 from food delivery. A significant association was observed between fear of contracting COVID-19 from food delivery and variables such as education level (p = 0.001), observance of social distancing (p = 0.03) and food delivery consumption frequency (p < 0.001). More people were careful about cleaning food packaging (from 12.4% before to 66.1% during the pandemic, p < 0.001) and disposal (from 47.6% before to 66.4% during the pandemic, p < 0.001) and heating the food before consumption (from 7.6% before to 13.7% during the pandemic, p < 0.001) and used payment methods without approximation (from 29.8% before to 43.2% during the pandemic, p < 0.001) compared with the pre-pandemic period. More people also reported that application of security protocols during delivery (from 29.8% before to 43.2% during the pandemic, p < 0.001) and in restaurants (from 7.2% before to 25% during the pandemic, p < 0.001) and possessing knowledge about the financial difficulty of the establishment (from 4.6% before to 17% during the pandemic, p < 0.001) were the most important factors for choosing a food service. Originality/value To the best of the authors’ knowledge, this is the first study to explore consumers’ fear of contracting COVID-19 from food delivery and consumer behavior related to food delivery services during the pandemic in Brazil – that is, way to order and payment methods, as well as concern and care related to the purchase of these foods.
