RESUMENEl presente estudio se elaboró una bebida láctica fermentada con de pulpa de naranja, carambola y maracuyá, a partir de lactosuero dulce proveniente de la industria de elaboración de queso fresco. En la formulación de la bebida se utilizó 75% de lactosuero y el 25% restante fue una mezcla de las tres frutas anteriormente mencionadas. Para obtener las proporciones se utilizó un diseño de mezclas del tipo Simplex con centroide ampliado. Se evaluó la aceptabilidad sensorial a través de 38 jueces no entrenados siguiendo una prueba hedónica con una escala no estructurada obteniendo que la bebida más aceptada contenía un 8.33% de cada fruta. Así mismo se determinó que el contenido de proteína se mantuvo constante luego de pasteurizar la bebida y el contenido de ácido láctico luego de la fermentación disminuyó, trayendo como consecuencia una disminución del pH. El contenido de cenizas también fue evaluado obteniendo menor cantidad de materia inorgánica en la bebida final. La aceptabilidad sensorial se ajustó a un modelo cúbico con un coeficiente de correlación R 2 de 0.8923 y un R 2 ajustado de 0.8385Palabras claves: lactosuero, aceptabilidad sensorial, maracuyá, carambola, naranja. ABSTRACTThe present study was made a fermented lactic drink with orange pulp, carambola and passion fruit, with sweet whey from the processing industry cheese. The 75% whey was used in the formulation of the drink and the remaining 25% was a mixture of the above three fruits. For the proportions design blends Simplex type with extended centroid was used. The sensory acceptability was evaluated by 38 untrained judges following a hedonic scale test with unstructured getting the most accepted beverage containing 8.33% of each fruit. Similarly it was determined that the protein content remained constant after drinking pasteurized and lactic acid content after fermentation, consequently resulting in a decrease in pH. The ash content was also evaluated getting smaller quantity of inorganic material in the final beverage. The sensory acceptability to a cubic model with a correlation coefficient R 2 of 0.8923 and R 2 adjusted of 0.8385.
RESUMENEl presente estudio muestra el efecto de la sustitución parcial de harina de trigo por polvos de peladilla de espárrago, brácteas de alcachofa y salvado de trigo sobre las características sensoriales del pan integral, para ello se realizaron previamente los procesos de molienda y tamizado de los ingredientes mencionados. El efecto fue analizado aplicando un diseño de mezclas de superficie de respuesta. Se elaboraron diez tratamientos que contenían en total el 15% de sustitución de los ingredientes ricos en fibra mencionados, solos o en mezcla. Se evaluó la percepción de los consumidores en cuanto al color, olor, sabor, textura y aceptabilidad general del pan integral, esta percepción fue medida utilizando una escala hedónica de 9 puntos. Las respuestas fueron estimadas mediante el modelo de regresión lineal y cuadrática para predecir las ecuaciones de las características sensoriales. Obteniendo como mezcla óptima la siguiente composición: harina de peladilla de esparrago 4.5%, harina de brácteas de alcachofa 0.75% y de salvado de trigo 9.75%. ABSTRACTThe present study shows the effect of the partial substitution of flour of wheat for powders of sugared almond of asparagus, bracts of artichoke and bran of wheat on the sensory characteristics of the wholemeal bread, for it the processes of grinding were realized before and sifted of the mentioned ingredients. The effect was analyzed applying a design of surface mixtures of response. There were elaborated ten treatments that were containing in total 15 % of substitution of the rich ingredients in fiber mentioned, alone or in mixture. The perception of the consumers was evaluated as for the color, smell, flavor, texture and general acceptability of the wholemeal bread, this perception was measured using a scale hedónica of 9 points. The answers were estimated by means of the model of linear and quadratic regression to predict the equations of the sensory characteristics. Getting as optimal mixture of the following composition: asparagus flour confection of 4.5%, artichoke bracts flour 0.75% and 9.75% wheat bran.
