Propolis is a product obtained from resins and exudates of different plants from different regions in order to protect the comb, with peculiar organoleptic, chemicals and biological properties. Considering this, this chapter presents the types of Brazilian propolis as the types available nowadays, their chemical compositions, as well as, some of their important biological properties enabling employing them as important health food, such as antimicrobial, antioxidant, and immunomodulation action. Various "in vivo" and clinical trial studies, conducted in different regions, on the safety and dosage of propolis, technologies used to obtain propolis extract, and several innovative presentations of this promising bee product are also presented in this chapter. Finally, this chapter aims to present the regulatory affairs, potential market for propolis around the world, and perspectives for a near future.
El suero de leche es un residuo líquido de la industria láctea, el cual es eliminado por losfabricantes de queso; la concentración de éste mediante ultrafiltración ha sido una alternativapara su aprovechamiento. Los objetivos del presente trabajo fueron: Obtener un queso a partirdel suero de leche concentrado por ultrafiltración y evaluar instrumentalmente la textura delqueso por los métodos de análisis de perfil de textura (TPA) y compresión uniaxial. En elpresente trabajo se concentró el suero de leche en un sistema de ultrafiltración de capacidadde 5 L bajo las siguientes condiciones: presión de 2,5 bar, temperatura de 25ºC, flujo desalida del permeado de 0,33 kg/h y membrana cerámica tubular de un tamaño de poro de 50nm. El suero concentrado se utilizó en la elaboración del queso con diferentes porcentajes desustitución y se hizo una evaluación instrumental de la textura; como resultado de evaluación,los quesos presentaron características de textura blanda con bajo contenido en grasa.
