Das ehemalige Cellarium des Domkapitels von Troyes (Departement Aube) befindet sich immer noch im Herzen des Kanonikerviertels. Obwohl es sich um den einzigen erhaltenen profanen Steinbau aus der Mitte des 13. Jahrhunderts handelt, liegt darüber bis heute keine umfassende Studie vor. Beobachtungen am Mauerwerk, verglichen mit dendrochronologischen Datierungen des Dachstuhles sowie die Auswertung der Archive haben drei große Bauphasen ergeben. Der Bau geht auf die Mitte des 13. Jahrhunderts zurück und besaß wohl mehrere Funktionen : ein Lagerraum im Erdgeschoss und ein Empfangsraum im Stockwerk, von dem Kamin, Bodenfliesen und eine holzverkleidete Decke zeugen. Im 16. Jahrhundert wurde das Mauerwerk erneuert ; insbesondere wurde der Ostgiebel neu errichtet. Parallel dazu wurde der Raum im ersten Stock von Maurern erneuert, die am 1506 begonnenen Portal der Kathedrale arbeiteten und an beiden Orten ihre Steinmetzzeichen hinterließen. Im 19. und 20. Jahrhundert erfuhr das Gebäude erhebliche Veränderungen : neue Türen und Fenster wurden gebrochen, alte vermauert und die Etagen neu gestaltet. Der Bau fällt zwar unter die Kategorie der Cellarien in Kanonikervierteln und Abteien, sein Grundriss weist jedoch Unterschiede zu den noch seltenen erforschten Beispielen auf wie auch seine Lokalisierung außerhalb des Kathedralkomplexes. Die neuesten Restaurierungen haben zwar die Spuren des 19. Und 20. Jahrhunderts nicht gänzlich beseitigt, aber sie haben dem Bau seinen ostentativen Charakter zurückgegeben.
Les fouilles préalables à l'aménagement d'un parking souterrain dans le centre ville de Troyes ont permis l'étude approfondie de six fosses d'inhumation contenant en tout une centaine d'individus. La simultanéité du dépôt des corps dans chacune d'elles, parfois sur plusieurs niveaux, témoigne de crises brutales de mortalité. Les archives indiquent que ces sépultures se trouvent dans la partie du cimetière paroissial réservée à l'Hôtel-Dieu.Dans ce contexte particulier de crises aiguës de mortalité, la mise en oeuvre d'une démarche archéo-anthropologique (analyse de la gestion des cadavres et de la distribution des âges et des sexes au décès) nous permet d'apporter de nouveaux éléments de réflexion. La confrontation des données concernant les inhumations simultanées de Troyes à celles relatives à une autre série ostéologique liée à des crises brutales de mortalité (épidémie de peste) contribue à démontrer toute la variabilité des situations pouvant être obtenues lors d'une crise de ce genre, tant dans les pratiques funéraires que pour l'impact démographique de la crise décelée dans le profil de mortalité des échantillons archéologiques.
