ABSTRACT. The aim of this study was to evaluate the effects of different aging times on the meat characteristics from young Murrah buffaloes slaughtered at 20-24 months of age (experiment I; n=10) and Murrah buffalo heifers slaughtered at 32-36 months of age (experiment II; n=10), with the purpose of determining the best aging time to tenderize meat from both experiments. Samples of the longissimus thoracis muscle from buffaloes slaughtered at each age were aged for 7, 14, and 21 days (0±1°C). After this period, analysis of cholesterol, pH, cooking loss, shear force, myofibrillar fragmentation index, meat color, and fatty acid profile was performed. Aging greatly improved the tenderness (p < 0.05) but caused a change in color (p < 0.05), which, even without difference between the treatments for subjective perception of the color (ΔE; p > 0.05), was considered very noticeable to the human eye. Furthermore, aging reduced the polyunsaturated fatty acids (p <0.05) and did not affect the levels of cholesterol (p > 0.05) in the meat of young buffalo and buffalo heifers of advanced age. Based on the evaluated meat characteristics, concludes that seven days of aging are sufficient for older buffalo heifers, but 21 days of aging are required for the younger male group. Objetivou-se com o estudo avaliar os efeitos de diferentes tempos de maturação sobre as características da carne de búfalos Murrah jovens abatidos com 20-24 meses de idade (experimento I; n=10) e novilhas bubalinas Murrah abatidas com 32-36 meses de idade (experimento II; n=10), com a finalidade de determinar o melhor tempo de maturação para ambos os experimentos. As amostras do músculo longissimus thoracis foram maturadas durante 7, 14 e 21 dias (0 ± 1°C). Após esse período, foi realizada análise de colesterol, pH, perdas de peso por cocção, força de cisalhamento, índice de fragmentação miofibrilar, cor da carne e perfil de ácidos graxos. A maturação melhorou a maciez (p < 0,05), no entanto, modificou a cor da carne (p < 0,05), a qual, mesmo sem diferença entre os tratamentos para percepção subjetiva da cor (ΔE; p > 0,05), foi considerada como muito perceptível ao olho humano. Além disso, a maturação reduziu os ácidos graxos polinsaturados (p < 0,05) e não afetou os níveis de colesterol (p > 0,05) na carne de búfalos jovens e novilhas bubalinas com idade avançada. Com base nas características avaliadas, conclui-se que sete dias de maturação são suficientes para as novilhas bubalinas mais velhas, mas 21 dias de maturação são necessários para o grupo de búfalos mais jovens.
A ovinocultura de corte no Brasil está em franca expansão, em virtude do aumento do consumo da carne desta espécie animal e também pela oferta de carne ser menor que a demanda do mercado interno, o que causa a valorização do produto. Isso torna a criação destes animais economicamente mais rentável em relação às demais espécies produtoras de carne para consumo humano.Grande parte das carnes e de produtos cárneos consumidos atualmente pelo homem passa por algum tipo de tratamento térmico, por ser mais palatável e também por eliminar ou diminuir a contaminação microbiana; tal processo pode alterar a qualidade do produto in natura, sendo importante conhecer a composição de alimentos cárneos assados. O processo térmico empregado na preparação dos alimentos altera o rendimento do produto final, sendo oportuno conhecer a alteração deste rendimento.Os produtos prontos para consumo, incluindo os produtos cárneos, constituem excelente alternativa para o mercado ( SILVA, 2004). Para os locais que comercializam produtos cár-neos prontos, é uma forma de agregar valor à matéria-prima. Para o consumidor, a aquisição dos produtos prontos se faz oportuna, diante da necessidade crescente de minimizar o tempo de preparo dos alimentos, principalmente para as pessoas dos grandes centros urbanos.A cocção dos alimentos proporciona trocas físicas, químicas e estruturais de seus componentes pelo efeito do calor (ROSA et al., 2006). As formas de transferência de calor, a temperatura, a duração do processo, e o meio de cocção para o preparo da carne são alguns dos fatores responsáveis pelas alterações químicas e físicas que podem modificar a composição química e o valor nutricional da mesma (GARCIA-ARIAS et al., 2003). AbstractTríceps brachii muscle from non-castrated ½ Ile de France ½ Santa Inês lambs terminated in confinement was used for physical and chemical analyses. In natura and roast meat moisture, protein, fat, ashes, carbohydrates, and meat yield were determined after the cooking process. Roast meat presented higher fat and protein values (7,49 and 33,67%), compared to in natura meat (5,36 and 18,85%), respectively. Ashes and carbohydrates percentages were not influenced by the treatments studied; however, in natura meat presented higher moisture values than roast meat (74,05 and 57,02%, respectively). Roast meat presented losses of 33, 20, 1,36, and 35,20% from evaporation, dripping, and cooking during its preparation, respectively. We concluded that roast meat presents higher nutritional value than in natura meat for fat and protein contents because in natura meat presents higher moisture value than roast meat, so roast meat presents higher fat and protein concentration. Meat preparation resulted in cooking losses of 35,20% from dripping and evaporation. Keywords: centesimal composition; consumer; lamb; meat cooking. Resumo -O objetivo deste trabalho foi avaliar o efeito da inclusão de simbióticos e de monensina sódica em dietas sobre o desempenho, as características de carcaça e a qualidade da carne de novilhas mestiças Angus em confinamento. Utilizou-se um delineamento inteiramente casualizado, com 64 animais distribuídos em quatro tratamentos: controle, dieta sem suplementação; dieta suplementada com simbióticos; dieta com monensina sódica; e dieta com simbióticos e monensina sódica. A dieta com monensina sódica e a dieta com simbióticos e monensina sódica proporcionaram maior ganho de peso médio diário e ganho de peso vivo total, além de melhorar a eficiência alimentar e biológica dos animais em comparação ao controle. A dieta de simbióticos, a de monensina e a de simbióticos com monensina sódica ocasionaram a redução da ingestão de matéria seca, elevaram o peso do filé da costela e os teores de lipídeos totais na carne. A dieta com simbióticos proporcionou a redução da força de cisalhamento da carne em relação ao controle. Synbiotics and sodic monensin on performance and meat quality of Angus crossbred heifers on feedlotAbstract -The objective of this work was to evaluate the effect of inclusion of synbiotics and sodic monensin on the performance, carcass characteristics, and meat quality of Angus crossbred heifers on feedlot. A completely randomized block design was carried out with 64 animals distributed in four treatments: control, a diet without supplementation; a diet supplemented with synbiotics; a diet with sodic monensin; and a diet with synbiotics and sodic monensin. The diet with sodic monensin and the diet with synbiotics and sodic monensin increased the average daily gain and total live weight gain, besides improving the feed and biological efficiency of animals compared to control treatment. The diet with synbiotics, with sodic monensin, and with synbiotics and sodic monensin decreased dry matter intake, and increased the rib fillet weight (noix) and the total lipid concentration in the meat. The diet with synbiotics facilitated the reduction of meat shear force compared to control treatment. The inclusion of synbiotics, with or without sodic monensin, in diet of Angus crossbred heifers, improves animal performance on feedlot and some physicochemical characteristics of meat.Index terms: beef cattle, chemical composition of meat, feed efficiency, shear force, body weight gain. RESUMO -Avaliaram-se as características de carcaça de búfalos Murrah castrados terminados em confinamento. Foram utilizados 20 bubalinos Murrah (15 meses de idade e peso inicial de 207 kg), castrados e descornados, divididos em quatro grupos homogêneos e abatidos aos 75, 100, 125, 150 dias de confinamento, após período de adaptação. Ao abate, as carcaças foram identificadas, resfriadas por 24 horas para pesagem e cálculo dos rendimentos das meias-carcaças, dos cortes dianteiro, pontade-agulha, traseiro total e serrote. Não houve diferença estatística para o rendimento de carcaça. Os pesos de traseiro total, serrote e dianteiro apresentaram aumento linear, porém, observou-se efeito cúbico do período de confinamento sobre os rendimentos de traseiro total e dianteiro. Verificou-se ainda aumento linear dos pesos de filé-mignon, contrafilé, fraldinha, coxão mole, coxão duro, lagarto, sebo, porção comestível e ossos. O período de confinamento promoveu efeito linear decrescente sobre os rendimentos de patinho, músculo traseiro e maminha + alcatra e linear crescente para fraldinha e sebo.Palavras-chave: búfalos de rio, carcaça, cortes primários, porcentagem, traseiro Yields of carcass, retail cuts and retail beef cuts of castrated Murrah buffaloes slaughtered at different periods of feedlotABSTRACT -The objective of this trial was to evaluate the carcass traits of feedlot castrated Murrah buffaloes. Twenty castrated hornless Murrah buffaloes averaging 15 months of age and initial body weight of 207 kg were used. Animals were divided in four groups and slaughtered at 75, 100, 125 or 150 days of feedlot after an adaptation period. At slaughter, carcasses were identified, cooled for 24 hours, and weighed for calculation of yields of half carcass, hindquarter, spare ribs, forequarter, and sawcut. There was no significant difference for carcass yield comparing the different periods of feedlot. Weights of sawcut, forequarter, hindquarter, tenderloin, strip loin, thin skirt, topside, outside flat, eye round, tallow, retail beef cuts, and bones all increased linearly while significant cubic effects were observed for yields of forequarter and hindquarter by increasing the days in feedlot. However, yields of knuckle, shank, and beef loin + tri-tip decreased linearly while those of thin skirt and tallow increased linearly when the feedlot period went from 75 to 150 days.
Twenty eight Mediterranean buffaloes bulls were scanned with real-time ultrasound (RTU), slaughtered, and fabricated into retail cuts to determine the potential for ultrasound measures to predict carcass retail yield. Ultrasound measures of fat thickness, ribeye area and rump fat thickness were recorded three to five days prior to slaughter. Carcass measurements were taken, and one side of each carcass was fabricated into retail cuts. Stepwise regression analysis was used to compare possible models for prediction of either kilograms or percent retail product from carcass mesaurements and ultrasound measures. Results indicate that possible prediction models for percent or kilograms of retail products using RTU measures were similar in their predictive power and accuracy when compared to models derived from carcass measurements. Both fat thickness and ribeye area were over-predicted when measured ultrasonically compared to measurements taken on the carcass in the cooler. The mean absolute differences for both traits are larger than the mean differences, indicating that some images were interpreted to be larger and some smaller than actual carcass measurements. Ultrasound measurements of REA and FT had positive correlations with carcass measures of the same traits (r=.96 for REA and r=.99 for FT). Standard errors of prediction currently are being used as the standard to certify ultrasound technicians for accuracy. Regression equations using live weight (LW), rib eye area (REAU) and subcutaneous fat thickness (FTU) between 12th and 13 th ribs and also over the biceps femoris muscle (FTP8) by ultrasound explained 95% of the variation in the hot carcass weight when measure immediately before slaughter
