Resumo: O propósito do presente estudo reside em analisar em que medida o pão e o vinho, topos do património alimentar português, se apresentam profundamente enraizados na ancestral matriz mediterrânea greco-romana. O sentido sócio-cultural das práticas alimentares a ambos associadas permite-nos considerar a importância que assumem enquanto marcadores da identidade de sociedades ditas "civilizadas", por contraste com as tidas por "silvestres". During this inquiry we were able to conclude that both products always acted as identity labels of civilization versus primitivism.

Resumo A presente obra dá conta de como o Património Alimentar do Mundo Lusófono (em especial de Portugal e do Brasil) resulta de uma verdadeira "odisseia" de sabores, pois assenta sobre as viagens (longas, incertas e, a mais das vezes, penosas) de portugueses para terras desconhecidas ou mal conhecidas -desde os tempos iniciais dos descobrimentos (sécs. XV-XVI) até os fluxos migratórios mais recentes (séc. XX). Em sua bagagem, os colonos e os emigrantes carregavam uma série de memórias identitárias (dentre elas, a gustativa). A respeito desses Novos Mundos, criaram uma série de expectativas, sem nunca deixarem de sentir certa nostalgia em relação ao local/ cultura de origem. O livro divide-se em duas partes. A Parte I reúne estudos sobre as raízes culturais greco-latinas e medievais da alimentação portuguesa (caps. 1 e 2). A Parte II é constituída por nove capítulos, todos eles dedicados à abordagem dos encontros multiculturais ocorridos entre portugueses, brasileiros e outras populações. Começa-se com o diálogo estabelecido entre portugueses e africanos, durante os sécs. XV-XVI (cap. 3). Seguem-se duas reflexões complementares: uma sobre a integração e acomodações do receituário português na América Portuguesa dos sécs. XVI-XVII (cap. 4); outra sobre a introdução de produtos das Américas no receituário conventual português da Época Moderna (cap. 5). Dedicam-se, ainda, cinco estudos à história da alimentação no estado do Paraná (abastecimento -cap. 6; questões de género -cap. 7; emigração -cap. 9; cozinha regional -cap. 10), um ao relevo da gastronomia regional na história da alimentação brasileira contemporânea (no estado do Piauí, cap. 11) e outro à revisitação do capítulo da História da Alimentação no Brasil, de Câmara Cascudo, sobre a "Ementa Portuguesa" (cap. 8).Palavras-chave História da alimentação, Património alimentar, Lusofonia, Portugal...

O poema do siciliano Arquéstrato (séc. IV a. C.) é um retrato da alimentação requintada das elites aristocráticas, com poder económico para comprar o mais caro dos ingredientes (o peixe fresco de qualidade) e para realizar as rotas gastronómicas implícitas no texto. No cap. I procede-se à análise dos dados biográficos do autor e à história da transmissão e receção da sua obra até aos nossos dias. Segue-se a tradução dos 60 fragmentos que a compõem (cap. II), acompanhada de notas explicativas e de fotos de algumas das iguarias (reproduzidas da forma mais fidedigna possível). No cap. III realiza-se uma análise detalhada do contributo do poema para a história da alimentação na Grécia antiga. Aí a "cozinha de Arquéstrato" é considerada sob cinco perspectivas: produtos, métodos culinários, utensílios, mobiliário e agentes de produção. Destaca-se nesta parte o recurso a mapas de localização de ingredientes usados na confeção das receitas culinárias presentes na obra e um pormenorizado estudo da terminologia técnica usada no universo da cozinha do poeta. A obra está, ainda, complementada por um anexo com as receitas das fotos, atualizadas segundo os padrões modernos, pela bibliografia (edições e estudos) e por índices de fauna e flora alimentares mencionados (em português, nome latino científico e em grego).Palavras-chave Literatura gastronómica, Grécia antiga, Arquéstrato, alimentação do Mediterrâneo, ingredientes, técnicas culinárias, história da alimentação.
