ABSTRACT:The drying operation is one of the most important stages of the coffee production. Thus, we aimed to evaluate the influence of the ambient relative humidity (40, 50 and 60%) in the natural process of coffee (Coffea Arabica L.) drying at different air temperatures (23 °C , 40 °C and 60 °C ) using mathematical modeling, equilibrium moisture content, and enthalpy of vaporization. Coffee cherries natural processed and dried with a drier of fixed layer was used. The study was conducted at the Department of Engineering and Technology Center of Post-Harvest Café, of the Federal University of Lavras. The results showed that the equilibrium water content of the coffee cherry is directly proportional to the water activity, and decreased increasing temperature during the same water activity. The Oswin model showed the best fit to describe the phenomenon of hygroscopicity of the coffee cherry. The latent heat of desorption increased decreasing the water content and decreased increasing temperatures of the same water content. In addition, the Midilli model showed the best fit to the drying data. Furthermore, the Gibbs free energy increased increasing temperature, it's their magnitude being was positive in the temperature range used in this study. In conclusion, the different ambient relative humidities did not significantly influenced the processes of drying coffee cherries. KEYWORDS: quality, dimensioning, project, dryer. No experimento foi utilizado café cereja, processamento de forma natural e seco em camada fixa. Nos resultados obtidos observou-se que o teor de água de equilíbrio do café cereja é diretamente proporcional à atividade da água e diminui com o aumento da temperatura, para uma mesma atividade de água. O modelo de Oswin apresentou-se melhor para o ajuste e descrição do fenômeno de higroscopicidade o café cereja. O calor latente de dessorção aumentou com a diminuição do teor de água e diminui com o aumento da temperatura, para o mesmo conteúdo de água. O modelo de Midilli foi o melhor, para o ajuste dos dados experimentais de secagem. Além disso, a energia livre de Gibbs aumentou com o aumento da temperatura, sendo as suas grandezas positivas na gama de temperatura utilizada neste estudo. Em conclusão, as diferentes umidades relativas do ar ambiente não influenciaram significativamente nos processos de secagem do café. Determinar o consumo de energia durante a secagem do café usando-se lenha e gás liquefeito de petróleo (GLP) como combustíveis em algumas propriedades, da região sul de Minas e avaliar as razões de possíveis variações existentes no custo entre produtores foi proposta deste trabalho. Vinte propriedades foram visitadas, mas apenas quatro selecionadas, com o objetivo de se padronizar a caracterização técnica e econômica da secagem; esta padronização incluiu: lavagem e separação do café, processamento separado do café bóia do verde-cereja, pré-secagem do café cereja em terreiro e complementação da secagem do café cereja em secador rotativo com capacidade de 15000 L, usando-se lenha ou GLP como combustíveis. Procedeu-se ao acompanhamento de três testes em duas propriedades usando-se GLP como combustível para aquecimento do ar na secagem e três testes em outras duas propriedades usando lenha, também como combustível. Os resultados obtidos conduziram às seguintes conclusões: as variações na temperatura do ar das secagens em que se usou lenha como combustível, foram maiores que as observadas nos testes nos quais foi empregado GLP; o consumo de GLP no queimador onde se usou chama intermitente, foi maior quando comparado com um queimador regulado para realizar uma queima constante do GLP; enfim, o consumo de combustível está fortemente relacionado ao manejo adotado durante a secagem.
Objetivou-se, com este trabalho, avaliar o uso de um inversor de freqüência de 25 cv na irrigação, considerando-se diferentes demandas de água como manejo. A avaliação consistiu de uma análise de custos e benefícios, ambos anuais. O custo foi calculado com base no fator de recuperação do capital, para taxas de juros de 6 e 12% e períodos de amortização de 5 e 15 anos. O benefício consistiu da economia de energia proporcionada pelo inversor de freqüência em relação aos procedimentos usuais de controle da vazão. Relacionaram-se os parâmetros econômicos e de manejo da irrigação, com o objetivo de se avaliar o equipamento para qualquer situação de projeto. Como exemplo de aplicação, analisaram-se duas situações de controle de vazão comparadas ao inversor de freqüência em um projeto de irrigação. Foram determinadas, com auxílio do inversor de freqüência, as características hidráulicas, em função da vazão de uma motobomba de 25 cv sob várias rotações. Observou-se que o inversor de freqüência pode ser viável, devendo-se avaliar a redução de potência advinda do seu uso e o tempo de funcionamento da irrigação, analisando-se a melhor forma de amortização.
The aim of the study was to describe the drying kinetics of washed coffee (Coffea arabica L.) and evaluate the best mathematical model to fit the experimental drying data conducted with different air humidity (40 %, 50 %, and 60 %) and temperatures (23 °C, 40 °C, and 60 °C). The fruit shakes were standardized washing, separation, and manual selection of green coffees, pass cane, and green buoy. Then, approx. 150 L of coffee cherries were pulped and taken directly to the yard. Drying the washed coffee was completed in a mechanical dryer and yard. The obtained results showed that the different conditions of the ambient air significantly influenced the processes of drying pulped coffee. The water content of the hygroscopic equilibrium of pulped coffee is directly proportional to the water activity and relative humidity, decreasing with increasing temperature, for the same value of equilibrium relative humidity. The Oswin model was best represented by the hygroscopicity of the pulped coffee, while the Midilli model shows the best fit to describe the drying curves of the washed coffee. The effective diffusion coefficient increases with increasing temperature of the drying air and reducing of relative humidity, being described by the Arrhenius equation PALAVRAS-CHAVE: Drying. There are various forms of processing that result in major differences in the sensory attributes and there are common reports of superiority to coffee peeled and pulped and in relation to natural coffee. Drying is one of the most important stages in the processing of coffee, both from the standpoint of energy consumption and the influence this has on the operation quality of the final product.Given these problems, we seek greater control of the drying parameters (temperature of the drying air temperature of the grain mass, relative humidity, and air flow) in order to minimize adverse situations to the product. On the other hand, if the best drying techniques are not used, the quality may be impaired as a result of physical, chemical, and sensory (BORÉM et al., 2008;SAATH et al., 2010). The drying of agricultural products, thin layer, has the purpose of determining the rates of drying of the product using for data collection recording the mass loss occurred in a sample during water removal (RESENDE et al., 2009).Thus, the drying curves, thin layer, vary with species, variety, environmental conditions, methods staging post-harvest, among other factors.
